Brilliant article from the recent issue of Wine Spectator written by Matt Kramer (winespectator.com):
Recently I found myself in one of those wine wrangles that, truth to tell, I usually try to avoid. (Check out any wine chat board on the Internet if you've got a taste? for this sort of thing.)
The wrangle was with, natch, a winemaker?, while at a social event. It involved the winemaker's assertion that "fine wine is art." I pointed out, as modestly as I could, that there's no denying that nature surely doesn't make wine on its own, let alone fine wine (vinegar? is more like it). I then went on to say that fine wine is, at best, a high craft both in the vineyard? and the cellar?.
Probably, if I had stopped there, the discussion would have proved amicable. But I took the matter one step further. (You're shocked, I know.) I submitted that saying that winemaking, and therefore its result, is "art" was self-aggrandizing. You can imagine how that was received.
Now, I admit that the self-aggrandizing bit was a low blow. Still, it's true. If winemakers can get you, me and, especially, their employers to see them as artists, you know what'll happen: Their salaries will rise, and producers, for their part, will start pricing wine as "art." And you know what that means.
So why isn't fine wine "art"? The answer is surprisingly simple. Art is creation; wine is amplification. The big? difference between an artist and a winemaker is that an artist starts with a blank sheet while a winemaker works with the exact opposite. A grape arrives at the winery? with all the parts included, a piñata stuffed with goodies, just waiting to be cracked open.
Is there a craft to doing that? You bet there is. But where an artist conceives of something out of the proverbial thin air, no winemaker anywhere in the world can do any such thing.
For example, when my wine heroine Lalou Bize-Leroy bought the former Domaine? Noëllat in Vosne-Romanée and transformed it into Domaine Leroy, she did not create her magnificent wines from scratch. It was all right there in the hallowed ground and old vines? of her newly acquired pieces of Richebourg and Romanée St.-Vivant. She didn't create something from nothing. Quite the opposite.
Fine wine is not creation. It is refinement. If it were otherwise, then everybody would be "creating" Lafite Rothschild or La Tâche or any other wine masterpiece of singular, irreproducible expression and high price. Counterfeiting aside, I don't see anybody doing that, do you?
They don't because they can't. That's precisely why fine wine is not art. It comes from all the forces that create a particularity of site. Great winemakers?which is to say, expert practitioners of winecraft?tease what they can from the sites that are available to them by planting the right grapevines, growing them astutely, harvesting the fruit at an ideal moment (a problematic issue today given some winemakers' and critics' preferences for ever greater ripeness) and handling the fermented juice? in the cellar with deft control.
This is no small charge, and I, for one, do not seek to diminish it in any way. But art? Not a chance. The poet E.E. Cummings put his finger on it better than anyone else: "A world of made is not a world of born." Wine is no more a blank canvas than the Grand Canyon.
Why does this distinction matter? Because abstract though it is, if winemakers and, yes, wine lovers, see wine as art, then the essential connection between what a grape expresses from its site and what we expect is severed. If a winemaker is an "artist," then he or she, by artistic right, can and should modify the result to suit a personal vision separate from a "mere" expression of place.
However, if the finest winemaking is seen as a high craft, rather than art, the expectation changes subtly yet substantively. Where art presumes a blank slate upon which a personal vision necessarily is writ large, the notion of craft is more deferential. Like great parenting, it's a guardianship of something already largely complete. The goal is refinement and amplification of what's inherent. Think of what happens when parents do otherwise.
So it is with wine. All sorts of technological deconstruction and reconstruction now occurs in many wineries today, especially ones creating high-end?or at least high-priced?wines. They see themselves as artists and would like to convince you of same. If they can, well, you know how distorted the results can be?and who pays.

It seems obvious on reflection but it remains an important distinction to make, especially given the widespread labeling of wine making as an art form, particularly in wine marketing circles.
Marking the first anniversary of the 24 hour drinking licence laws, a 'rescue remedy' called Dink has been released.
It is supposed to mitigate the ill-effects of binge-drinking with ingredients that mop up free radicals produced by the liver when it is processing alcohol. It is also cheap and readily available.
It is being marketed to "people who like to get merry". Presumably because they feel it is unwise to market it to people who like to get smashed out of their skulls every Friday night and throw up partially digested burgers on street corners. I think we know who it is actually aimed at.
I must admit that my first thought was "great idea", sounds so useful. But while I'm no Catholic I do think the pain of hang-overs is justly deserved and should reflect any excess. The sparkle generated by a few drinks with friends too easily degenerates into boorishness and incapacity beyond a certain point. There are very few elegant drunks.
And aren't we supposed to be cutting down binge drinking, as a society? We need a cultural shift that comes collectively - social evolution if you like, of the kind we've seen with smoking, drink driving and wearing seat belts.
Most Friday-nighters, though by no means all, are young people with their whole lives ahead of them and of course there is a natural protective urge to want them to stay healthy. The price that many of them pay for their excesses can be heart-breaking. Blaming them as being responsible for their own actions is ridiculous if the message they absorb is that getting really drunk and doing stupid things is clever and/or funny.
And now we are giving them the tools to avoid hangovers. I like drinking and sometimes I drink more than I should, but I also know that my body hates it when I do. It's a natural defense mechanism to show us our limits and should not be overlooked as a preventative.
If we no longer have any medical consequences we will push our bodies over the limit as a matter of course. But often the real trauma of binge drinking is the wider physical and emotional damage caused by violence, bravado, promiscuity or recklessness . Can we develop a pill for that too?
You should never buy a wine on appearance alone, but the postage stamp label and odd shape of the 2006 Coppola "Encyclopedia Wine" Cabernet Sauvignon caught me hook, line, and sinker. This is from Bordeaux, $14, 12.5% abv. The embossed molecule on the side of the Erlenmeyer flask-style bottle is a diagram of resveratrol, the compound in wine linked in some studies to health and longevity.
Aromas of blueberry and plum, with flavors of dark berries and a touch of tart cherry. Nice pie crust aftertaste. The body was a little thin at times but was overall an easy drinking cab sav. My only complaint is that it doesn't taste much like a Bordeaux; I was looking for earthy or vegetal notes, maybe even a touch of tobacco or something, but it was a fruit-forward wine more in the California style.
The wine is pretty food friendly, going well with beef and salumi and a dozen other odds and ends, and I'd heartily endorse this as a good all-purpose wine selection for Thanksgiving. I also love the fact that it's relatively low in alcohol: 12.5%. Definitely a nice change of pace from the big 15% cabs.
I do like the concept of this line--single grape wines from around the world, presented in a fun and affordable manner. It's obviously a marketing strategy towards the younger, curious wine drinker, and I hope this is successful both for the winemakers and the newcomers to the wine market.
It’s sweatin’ time here again. We brought in the rest of our Pinot Noir last week, and processed about 35 tons in 3 days. We got through that, certainly, but then the monster that rears it’s head as a result is a *@!#-load of punchdowns….needless to say, I’m not very popular around here at the moment.
Maybe we should go back to doing it the old-fashioned way as it seems like it might’ve been more fun than modern times….at least the old-timers could drink some wine and hike up their skirts while mixing-up their fermenting must!
Red Barn Winery opened May of 2004. It is located four miles North of the city of Syracuse in Liverpool, NY. Open Thursday thru Sunday 12 noon to 6 P.M.
Paul Martin is the sole owner and winemaker with decades of experience. Old world (European) winemaking experience and new winemaking techniques are incorporated to produce great wines. N.Y. State grapes and fruits are used exclusively. The 3000 sq. ft. winery is built around a ?Turn of the Century? design. Tasting room # 1 is cozy, consisting of a fireplace, rocking chairs, couches and plank floors. Tasting room # 2is of the Western saloon style, high ceilings ( 25?), hand hewn beams, plank floors and antiques.
The Hearty Red is a very nie, solid, table red. Dry, with notes of cherry and vanilla. Nice!
We are pushing to get all of the Pinot in and destemmed. Chula Vina and Hilltop Ranch have been harvested. Palisades will be tomorrow. Holly, Hummux and I are working the night shift. There’s nothing like being sticky, tired, wet and cold after midnight….
Established in 2002 by Sam and Audrey Watt from what was an apple orchard, this small vineyard makes microscopic amounts of wine. We found this place mainly due to the attractive accommodations but the wines are something of a surprise bonus. The vineyard currently spans over 5 hectares with vine densities of 2600 vines per hectare. The soil here is predominantly clay from the Moutere area. What I would really like to highlight here is their 2007 SVSauvignon Blanc which is one of the best expressions of New Zealand SB I have had this trip and perhaps the top handful I have had from New Zealand. Ladies and Gentlemen, I'm not going to mince words here - if what you want is a light, tart and aromatic quaffing wine then this is not it. Sometimes, I am convinced that the British wine trade wants to box in New Zealand Sauvignon Blanc as aromatic, tart thin thirst quenchers to serve before the serious wines- bullocks. If that's what people think will sell then it becomes a self-fulfilling prophecy.
This starts with an explosion of intense aromatic fruity & zesty fireworks. It is then followed in the mouth by intensity, density & concentrated nectar with a lingering finish. This has character, guts and strength. The fruit were late picked (by hand) and yielded 2.5 ton/acre (quite amazingly low yields for this grape and the region). 92+ Points
In a tasting of her wines, Audrey Watt put the Sauvignon Blanc last as she was afraid it would dominate if it was first. In most other shops the SB is invariably first to taste. She also told me that the wine judges didn't know what to make of her Sauvignon Blanc - I can see why it's totally out of their comfort zone and hit the ball way outside the park.
Last month at the Illuminati estate in Abruzzo, I had lunch with my people. No, they weren?t Sicilian or Calabrese cousins. They weren?t my co-workers or clients meeting me in Italy. It was much more visceral than that, almost tribal in the connection. I was invited to have lunch with a wine sales team, guys who sell to wine shops and restaurants in Rome.
Over the years I've had many meals at Illuminati. In the early days we had meals on the second floor of the old house, sometimes outside. If it was cold we?d invade the dining room. As the winery grew and the Illuminati family redesigned the old stable on the main floor, we settled into the space they called the Luperia, a space with a kitchen and an open hearth. And a larger dining room. Many great memories exist in this room, but I had never sat down to eat with my own regiment. And during those years, friend and cellar master, Agostino, has opened many a bottle for us to enjoy. We?ve grown into the job together.
I was really excited about this meal. I was prepared to pick the brains of rookie and veteran alike. Who would know better the travails of selling wine than a salesman from Rome? What kind of kickbacks did the Roman restaurateur demand? How did one go about getting control of the wine list or selling a wine from Abruzzo to a Sardegnan? I was hoping for all mysteries to be revealed.
Dino Illuminati, the patriarch of the estate, motioned for me to sit next to him. Lunch is serious business for Dino and he didn?t want anyone to get too near him with idle chat. He wants to eat and drink first. I know the drill. When Dino and I sit down we both go after food and wine pretty well much in the same way. Except Dino has a capacity that I will never be able to match.
One of the older veterans sat across from me. He reminded me of one of the salesmen back home. This gent had a peaceful air about him, he was the elder statesman; he grew up in Amatrice in northern Lazio.
I asked him how his route was. Was it competitive? Cutthroat? Was it hard to collect money? Did you get resistance with all the new wines coming out? What about the prejudices of owners from one region against the wines of another region (i.e. Piedmont vs. Tuscan). I was surprised to be reminded that they don?t go around tasting wine, sampling as we call it. Now they just carry their list, with maybe some Gambero Rosso review (very big in Rome) and the price list. Pretty cut and dry. Rome was a city that was prepared for all comers, and has been this way for hundreds if not thousands of years. Anything goes.
I was looking for their ?hook?. How did they catch the big fish? Figuring Rome would be like NY or LA or Houston, there was always the particular technique that worked for the peculiarity of the particular city.
He was a thoughtful guy. And we were starting to drink pretty well by then. The big slurpy purple stuff they make in Abruzzo that they call ?Montepulciano in purezza.? All the while the young salesmen would come over to him and bear hug him or jostle him around. You could tell these guys liked working with each other; there was camaraderie among them.
?Alfonso, what really works best is the rapport we build with our customers. Trust, time and relationship.? Ah, the ?R? word. So the secret was, there is no secret; daily treading, pressing the flesh, and being reliable. Showing up. Building trust. Just like almost everywhere else.
Look at these people. They?re having fun. They?re enjoying their lives. They?re enjoying each other.
I told some stupid story, trying to be funny, about a sales experience here in The States, but I don?t think the experience translated so well to their frame of reference. No matter, platters of grilled lamb, sausage and pork were pulling up to the table and we soon were diverted to the main course.

The Luperia is a wellspring for me. I come back here to re-connect with those souls who are manifestations of the timeless energy that travels through the vine. Daniele Spinelli was one of the early winemakers I came to admire. I loved hanging out with him. When we would sit down to eat, as the night progressed, and as we went into red wine, the stuff he made, his head, shaped appropriately like a grape, would turn redder and redder. My Italian would get better and he would bestow his bodhisattva-blessing on me as a way to replenish me for another year. And send me back out to the outer regions to spread the word. It worked. And we came back every year or so, like pilgrims.

Now, Dino isn?t so hands on. Spinelli passed away in 1992. But the next generation is upon us and there are more of them. As it is in the streets of Rome, so it is in the vineyards of Abruzzo. This is something that has been happening for hundreds of years and will continue, hopefully, for many hundreds more.
After lunch we went outside for espresso and cigars and fresh air, what a combo, eh? The sales crew had to get back to Rome. It was only three hours we?d had to sit down and break bread, but in that time I felt like a huge gift had been dropped in my lap; An afternoon with my selling tribe; with the young ones, the veterans, the crazy ones, the calm ones. Its not a closed brotherhood but it is a deep connection, to capture what is growing right out there in the land and transform it to wine and take it to Rome and NY and Austin and try and share with all those folks in those places these amazing miracles in bottles. Not just wine, but the lives, of Spinelli and Spinozzi and Illuminati and you and me and anyone that wants in on this.
This is the joy of selling. This is why I am on the wine trail in Italy and anywhere else the road takes me.

What with the Summer Games currently placing China and its regional cuisines in the limelight in terms of reflecting nearly a continent?s worth of complex, multi-ethnic influences, we should also consider other similarly impressive culinary miracles that geographically take up an infinitesimally tiny fraction the size of China?say Slovenia. In my understanding at least, Slovenia has always represented a fascinating crossroads within an impossibly modest amount of land. Many diverse and even warring influences have laced Slovene customs, viticulture and cuisine. Somehow though, like a cultural or culinary manifestation of the metaphysical concept in J.L. Borges? The Aleph, individual influences never amass into an incomprehensible amalgamation, but rather, remain clearly discernible.
Whether in its fairly recent history as a sovereign republic, under communism or seemingly serving as the geopolitical puck between Napoleon and the Habsburgs? shuffleboard match, Slovenia?s former overlords and neighbors include decidedly unique food cultures?Croats, Istrian Italians, Hungarians and Austrians, among others. Bearing all of this in mind and turning our thoughts to the central concern here on Enotheque, I would like to recommend this wine from the Gori?ka Brda region. Aside from being one of the wines I?ve been enjoying recently, I chose to post on it because I strongly feel that it?s indicative of the impressive quality-value dynamic that importers and retailers could benefit from should markets seem more receptive to the artisan wines of Slovenia.
Even if one is already familiar with the Colli Orientali of Friuli?sRibolla Gialla, the Slovene version, Rebula, is more than worth trying. As a whole, Slovenia and the Gori?ka Brda produce white wines of impressive caliber, be it from more distinctly regional varieties or others introduced from abroad: Briski Tokaji, Teran, Chardonnay, Sauvignon Blanc, Sivi Pinot, Pinela, or Rebula for that matter. In terms of this one, vintner Matjaz Cetrtic farms Rebula on wide, terraced limestone vineyards, purposefully limiting yields to ensure lush, concentrated and nuanced wines. Tasting Notes?
Appearance-wise, this wine is medium gold. The nose is clean and of medium intensity, with highly unusual though pleasantly different aromas of caramelized or burnt orange peel, citrus, flowers and minerals. Strange, delightful palate with just enough lemon acidity, hint of underripe green fruit flavors, minerality in the form of pebbles, as well as the aforementioned burnt orange peel flavor that leads into a nice finish. If in search of something wildly, completely different, I wouldn?t doubt to reach for more Slovene wines such as this Cetrtic Rebula.
As a closing note, should the unbelievable degree of complexity in tiny Slovenia?s food and wine heritages impress you and compel you towards further learning, visit the culinary section of what appears to be their official tourism portal on the web.
We hopped in the car with some friends yesterday and went on a little day trip to Chicago to take in WIRED magazine?s 2008 NextFest , an annual exhibition of emerging technologies.
While not nearly as grand in scale as the 2005 event on Navy Pier, this year?s show in Millennium Park still packs a lot of wow factor in its exhibits ? and admission is free. We were greeted outside the tent by a whimsical, grass-clipping electronic sheep (which later had to be corralled inside after a light rain began to fall). Once inside, there were exhibits relating to about every aspect of modern life, including clothing, art, design, health, transportation, communication, entertainment and the environment.
Toyota, which along with Xerox and Citi is one of this year?s major sponsors, brought along a range of transportation exercises ranging from personal vehicles (imagine a luxurious Segway) to its plug-in Prius, a pre-production model that is currently undergoing real-world shakedown tests. Toyota also is showing its 1X concept vehicle , a lightweight (980 lbs.), fuel-sipping (90 mpg) four-passenger vehicle suitable for urban environments.
Xerox focused on green technology, including its solid-ink printer technology that reduces waste by 90 percent and is much more cost-effective than conventional color printers and a paper that printing fades from over a 24-hour period so that it can be reused. Those who value the permanence of print might find this a strange product, but Xerox was motivated to develop it after determining that more than 40 percent of office printouts are discarded the same day they are printed. Obviously, the potential savings in money and resources made possible by such a technology are enormous, particularly for school systems, large corporations and governmental entities.
In the energy and environment section, a technology that rapidly makes diesel fuel from algae and ultra-efficient photovoltaics that convert 40 percent of the sun?s energy to electricity ? up from 15 percent for conventional solar panels ? were the standouts. For photographers, the Gigapan technology developed by NASA and Carnegie Mellon University is exciting, and apparently will be surprisingly affordable. And while it seems unlikely that you?ll ever see them at Bed, Bath and Beyond, the food-delivery systems created by designer Martin Kastner for chef Grant Achatz will give foodies something to drool over.
Nextfest?s run will continue October 7 through 12 (the show is closed on Mondays). If you get there early, you could have time to wander through the Art Institute across the street or head down to the Museum of Science and Industry to tour the modular, green smart home which will be on display through January 4 of next year. If your route to Chicago takes you up I-65, be advised that major highway construction will cause you to take a detour , whether your preferred route is the Tollway or I-80/94.

Last week, I was joined by an adventurous group of diners and drinkers for a completely unique meal at Manresa Restaurant in Los Gatos, California. The result of months of discussions and planning between myself, Chef David Kinch, and Wine Director Jeff Bareilles, The Sake Dinner was an extraordinary experience.
To my knowledge, no non-Japanese, U.S. restaurant of the caliber of Manresa has ever done a tasting menu exclusively to be paired with world-class sake as we did last Wednesday night. Chef Kinch created a special eight-course meal that drew on his deep love of Japanese cuisine and its influence in his cooking, while I provided some of the best sakes available in the United States.
The result was a tremendous meal, made all the better by what was a great group of folks who chose to join us.

I've eaten quite a few meals at Manresa, but this was certainly one of my favorites, irrespective of what I was drinking.
The sea bream and caviar dish was simply tremendous -- one of the best things I've put in my mouth in months. The lobster dish had a remarkable little bit of young artichoke cooked in wood ash on it that was stunning. The autumn tidal pool (which sadly I forgot to take a photo of) was unbelievable, from the quality of the sea urchin to the rich smoky foie gras at the bottom of the dish.
Everyone who attended was interested in learning more about sake, so I started the evening with a brief explanation of how sake was made, and then answered questions throughout the evening after introducing each sake that was poured.
Large dinners like this are always different, and the nature of the experience rests quite squarely on the dynamic of the people who are attending. This was one of the best such dinners I have hosted at Manresa because of the conviviality and enthusiasm of those who attended.
I didn't capture every dish, unfortunately, but I did manage to get a shot of most of them.

This is another great wine from the WinEco winery (Podrum Radenkovi?) from Southern Serbia. It is a not-very-dry Chardonnay, without a strong nose, but with an exceptional balance of fruity and barrique aromas. It is easy going, with a full taste, definitely one of the wines to accompany your lighter meals. It’s barrique traces make it a great complement to slightly smoked fish or cheeses, but it’s also great on it’s own.
In general, Chardonnay is particularly suited for the barrique (oak aged) treatment. Chardonnay Barrique develops a pronounced cognac aroma and becomes a truly full-bodied wine - all hints of fruity flavours become very subdued.

Sainsburys Taste the Difference Sancerre 2004 £8.54 has a round, fruity, open nose with a touch of minerality and a clean freshness. The good, underlying fruit with its tantalising honeycomb edges was somewhat hidden by the very high acidity on the palate. So I thought perhaps what it needed was some cheese to round it out...
First up Organic Wensleydale. This crumbly white is more texture than flavour but did fill out the wine and brought forward the fruit -peachy aromatics. The lightness of the almost cottage cheese texture really complemented the delicacy of the wine. There was a hint of a salty tang too.
Then Woolsery, http://www.woolserycheese.co.uk , this is a medium hard goat's cheese from Dorset and is so tasty. It was the best in combination with the wine too. The slightly salty creaminess perfectly cut the acidity of the wine down to size. The cheese had a decent level of acidity to it as well. It was grassy and had a goaty note but was not overly pungent. Great stuff.
Next up Vintage Gouda, the label didn't give a year or age though - perhaps this is cheese parlance that someone can enlightenment me about? This had a wonderful flavour, nutty, earthy, hay aromas, very fruity in fact. It is a dense and creamy cheese which cancelled out the acidity in the wine altogether and made it seem almost flabby! Not quite right together.
Finally Doux de Montagne, very like a Spanish Manchego with its subtle flavour and rubbery texture. It tasted slightly soured too but in a good way. The wine overwhelmed this cheese though and it had very little impact when tasted together.
So my big sister took me to see Madonna last night for my birthday. It's - ahem - a big one, and it's right around the corner. But I digress. Last night rocked, and here's why: Not long after we arrived at the Oakland arena, we stopped outside of our (nose bleed) section to fish out our tickets. As I reached for mine, a woman brushed by me and knocked my tall cup of water all over the floor right at the entrance to our section. Not wanting anyone to miss seeing Madonna on account of a broken neck, we called out for help from two hipster types standing nearby with "official-looking" passes around their necks. "We don't work for the venue" they shot back, and so we were on our own to mop up the mess until a kind woman who DID work for the venue showed up with a mop. As we made our way past these same two hipster-types on the way into our section, one of them followed us up to our seats and sat down right next to me.
We’re back with part 2 of our coverage of the 2007 Sta. Rita Hills annual celebration of wine. Saturday, it was seminar time, complete with a series of mock ?trials? where local winemakers and grape growers defend or prosecute their contributions to what ends up in the glass.
Sitting as judge in ceremonial garb was real-life attorney Cathy Pepe, co-owner of Clos Pepe Vineyards. Among the issues on trial: Chardonnay - to oak or not to oak, that is the question; and Pinot Noir - do clones or terroir have the greater effect; and finally, is it the growing conditions or the winemaking the greater influence on the wine.
Join us as we hear from various growers and producers, as well as get a glimpse of some of the marvelous food that will be matched up with local Chardonnay and Pinot Noir.

Acidic core with citrus and chalk on the palate
Finish of pear and nicely tapering mineral layers.
I usually cringe at seeing celebrities or entertainers on wine labels- and there are plenty of them. When I received this bottle with the description of the iconic Barry Manilow brand on the back label, I thought of all the "Fanilows" that this wine will appeal to. I didn't think it would also appeal to me.
I never would have reached for this wine in a shop, but I quickly learned once again not to judge a book by its cover. This is a nicely crafted Pinot Grigio with a very desirable combination of fruit, acidity, and minerality. A sampling of prices puts this wine at $15 or so. Raise a glass!
Following the theme of my last post about Americans? increasing awareness of the quality wines that many artisan producers of Argentina are exporting, I?m pleased to post the first installment of my interview with Ed Lehrman of Vine Connections.
