It's almost the end of Breast Cancer Awareness Month, so I wanted to send along some links to stories I've written this October about breast-conscious winemakers whose rockin' projects support breast cancer research. After the post on the literary James Bond's Vesper cocktail versus the vodka martini of the movies, I decided to tackle a similar movie/book/beverage change. In the film version of The Silence of the Lambs, Hannibal Lecter memorably said, "A census taker once tried to test me. I ate his liver with some fava beans and a nice Chianti."
In the book, it was a "big Amarone". As I thought about this, I realized that some well-prepared liver, fava beans, and a nice Italian wine would be a pretty good dinner, if in somewhat questionable taste. Let's just go ahead and get this straight: this is a normal cow's liver from the grocery store. Benito's Wine Reviews does not endorse cannibalism practiced upon census personnel or anyone else for that matter.
Despite the disclaimers, it still freaked out The Roommate, as this movie gave her nightmares for years afterwards and one of the house rules is that I don't do my Lecter voice around her. More liver for me!
Liver and onions is a pretty common pairing, and I looked at a few different recipes. A big contender was Mario Batali's fegato alla veneziana, but I settled on Anthony Bourdain's foie de veau lyonnaise. At the end of the recipe, he suggests several variations, including adding apples and pork to the onions. I sliced up some of those Ozark Gold apples and a bit of prosciutto to go along with the onions, and the liver was just lightly fried on each side. The best parts of the liver were the least cooked, sort of a medium rare pink. It's difficult to achieve this using the thin slices commonly available; I'd like to get a full liver and cook one-inch cubes in the future.
The fava beans were prepared with onion, bell pepper, and tomato paste, amongst other spices and seasonings. I started with dried beans (I've never seen fresh ones around here), and by the time the dish was done the beans had fallen apart into a chunky mush. This did not affect the flavor of the dish, which was rich and savory. While there are many substitutes for Italian classics like fava and cannelini beans, somehow the real thing is always best.
And what about the wine? The 2003 Bolla Amarone della Valpolicella was a real treat. $46, 15% abv, made from a proprietary blend of partially-dried Corvina, Rondinella, and Molinara grapes. It had gorgeous aromas of fig, fennel, and cedar, with flavors of pomegranate and currant. I allowed it to decant for about two hours before the meal and it went along very well with the meal. This bottle, and other Amarones topping $100, would fall under the "special occasion" wines for most folks I know, but I felt it was well worth it here. It helped elevate the dish far above the sad, overcooked liver and onions that rest under heat lamps at diners and dives throughout the country.
All in all an unforgettable meal. While I won't be replicating it precisely anytime soon, I do want to experiment further with liver, and I think that fava beans could be a great addition to the Thanksgiving table.
The best kinds of cheap wines are the kinds that have a rich story behind them. Well, The Tillerman White wine brought to you by the Hook & Ladder Winery certainly fits the bill. At first glance this wine label made no sense to me… Hook & Ladder? The Tillerman? After doing some research, I feel enlightened knowing the origins of this fine cheap wine, so I’ll share:
The owner of the family-run Hook & Ladder, Cecil De Loach used to be a firefighter! “Hook and Ladder” is just another name for a firetruck. And The Tillerman is guy who drives the back end of a firetruck. A firefighter and a wine-maker! What a life!
I sampled several bottles of The Tillerman White, and I am glad I did. Not being a fan of white blends with a lot of oak, I enjoyed everything about this wine. The peach/apricot aroma was the most prominent feature of this wine as it approached my nose. The wine was very dry, tasty, had an awesome finish. Just a perfect all-around table wine. For about 16 bucks or less, this Sonoma County wine is a steal. If you see it in your supermarket, snatch it up! I look forward to trying some of their many other varietals. This same vineyard, the Russian River Valley produces Chardonay, Gewurztraminer, White Zin, Pinot Noir, Zinfandel, Cabernet Sauvignon, and the “Third Alarm” Reserve Chardonnay. Oh, how I would love to visit the vineyard one day. Rating: 9/10 - Excellent! The only reason I’m not giving it 10 is because I promised my readers “cheap wines less than 15 dollars” and this wine retails for 16. Look around though, I’m sure you can find a good deal! Even if you can’t, it is worth the extra dollar.

California study theorizes that antioxidants and resveratrol in red wine may cut down on cancer risk...
A daily glass (or two) of red wine may reduce the risk of lung cancer in men, particularly in smokers, according to research published in the October issue of Cancer Epidemiology, Biomarkers & Prevention.
Smokers suffer from an especially high risk of lung cancer. According to the American Cancer Society, 213,380 new cases of lung cancer were reported in the United States in 2007, with 160,390 deaths, making it a leading cause of cancer death in the country.
I have been traveling back and forth across the country for the last two weeks and have been working long days for months. In between flights and endless delays in airport waiting lounges, I try to make study time for my WSET exam coming up all too soon in a few days. After a grueling, four-city tour, tonight I feel justified in picking something special to celebrate a clean desk and being home. A bottle of Amarone is definitely appropriate. The bottle I decide on is an Amarone Negar 1961. Yes the vintage is right, 1961.
It was a great year for Italian wine in 1961 ? rain and sun in perfect balance. John Kennedy was president of the USA. The Berlin Wall was under construction. Maria Callas was 38 and at the height of her career. Sophia Loren was starring in El Cid, and I was all of nine years old.
The label is a little worn and torn. The fill level looks promising ? still mid neck ? although there is a little sediment. The cork seems to be okay ? solid and removes easily without crumbling. Should I decant and risk adding too much air? I pour a glass to see what has happened to this 40-something wine.
The color is amazing ? dark red, with a little orange and brick red on the rim. The nose is equally remarkable ? still lots of fruit left on the nose, black cherry with truffle, and a little sherry oxidization odors in the background. A few swirls of the glass and the oxidative aromas disappear.
The taste and finish on this wine is surprising, still full of black cherry, truffles, and forest floor with a finish that lasts for minutes. The tannins are like silk, and there are not enough descriptors to describe the mouth feel and full body. The acidity must be holding this wine together.
Now, there is a caveat to this story. We both love Amarone, so there is a built in basis here. But points and ratings have no relevance to this wine. It is, quite simply, a great wine. It is like the Callas aria playing on the stereo ? powerful yet filled with grace and finesse. It is an Amarone at its heights. Yes, 1961 was a good vintage year for Italian wines. I am going to lay down some bottles for the future.

This Amarone is a perfect example of why Frank and I both hate the point system. Is this a 98 or only a 97 point wine? After all, how do you define the difference of a single point? Or has this venerable liquid actually achieved the enviable position of 100 points despite its initial hint of oxidation? It is only two additional points after all.
And if we were to rate it as a 98, would that make it comparable to the 2004 Cabernet Blend IX Estate from that received a 98 point nod from Robert Parker? Hmmm, let?s see. A three-year old blend of 59% Cabernet Sauvignon, 22% Merlot, 13% Cabernet Franc, and 6% Petit Verdot from Napa Valley versus an Italian Amarone with almost half a century of love, care, and passion in its provenance. Somehow, the comparison just doesn?t work ? although I suppose one day, some scientist, somewhere in the world, will come up with a formula that proves you can actually make a meaningful comparison between apples and snow peas.

CHICAGO (MarketWatch) -- On a hot, sunny Friday here in September only days after the first Monday market meltdown, two well-heeled wine buyers battled each other at a private auction for the privilege of shattering a world-record price for a single case? of 1982 Chateau? Lafite Rothschild.
A Chinese buyer who flew in from Beijing for the Hart Davis Hart Co. auction won with a final bid of $54,970 -- a whopping $4,580.83 a bottle. At its release in 1984, a single bottle would have sold for roughly $100. A case of 1990 Romanee-Conti Domaine? de la Romanee-Conti that was released at about $500 a bottle sold for $179,250, or $14,937.50 each. A case of 2000 Chateau Petrus was bought for $57,360, or $4,780 a bottle. At its release, the price was $750 a bottle.
Such dramatic price appreciation is not the norm for wine investments, but it does underscore how lucrative and resilient investing in fine wine can be -- particularly so at a time when market volatility is deflating 401(k) accounts and retirement nest eggs, and low interest rates are choking returns on cash and other investments.
It’s pretty easy to call a wine sweet: it has a perceptible level of residual sugar in it (five grams of residual sugar is often considered the threshold of perception). Sweet wines generally start at about 45 grams of residual sugar (RS). Some wines, such as Tokay, have require a minimum level 60 grams of RS and rate wines by sweetness with six puttonyos being instant diabetes.
What’s the opposite of sweet? Dry. All the discernible sugar has been converted to alcohol during the fermentation process. Tricky since you might think the opposite of dry is wet and, well, all wine is wet. Dry doesn’t have to do with high tannins, which might make you go “chomp, chomp” and think “OMG, my mouth is drying out! I need water!” It’s just close to zero grams of residual sugar.
And there’s a middle ground of “off-dry,” or slightly sweet. Silly term, I agree (what is it, moist?). Slightly sweeter than that can be called medium dry. If you want to get all wonky geeky, off-dry might be five to fifteen grams of RS and medium dry, from fifteen to forty. Some countries and/or regions are so wonky geeky that they have specific terms and laws for these levels.
Oddly enough, a wine with a lower amount of residual sugar can sometimes taste sweeter than one with a slightly higher amount; it’s often a question of balance with acidity and one category that can be hard to discern in this regard is Champagne, which also as carbon dioxide zooming at your palate as well.
I bring this up because it came up in the comments of this recent posting about “light” as a wine style. And it comes up regularly in my NYU class. If you want to see sweet and dry in action, try tasting these two Leitz wines or a Northern Rhone syrah against a ripe, sweet version of the same grape from somewhere in the New World (but not all are ripe and sweet).
With the worldwide financial crisis in full swing, it’s a time a lot of wine lovers will be looking to dial back their wine budgets a bit. From my informal polling on Twitter, most are drinking the same amount of wine but less expensive selections are gaining in popularity.
With that in mind, I’m launching a new feature I’m calling “Wines For Recessionary Times.”
That doesn’t always mean cheap wines but we will start there and explore the most extreme values in all price tiers. I’m talking about the $10 wines that give $25 wines a run for their money. Also those $30 wines that make you shake your head and wonder what they were thinking charging $75 a bottle for a similar wine. Or those auction finds that you want to keep to yourself so you can buy more before they are sold out. And wines you can buy for less than $50 A CASE.
So stay tuned as I look for wines that you would guess are 2 or 3 times more expensive than they actually are. This should be a fun project but let’s hope it’s short lived and not necessary this time next year.
At the recent Albany event at the Desmond, I had a chance to meet Chris Reno of Chateau Lafayette Reneau. I chatted with him for a while, and tasted some of the exciting new varietals. Always a personal favorite, I wanted to try their riesling.
The riesling did not disappoint. It had a wonderful nose and an excellent balance between fruit and acid. Still one of my favorite rieslings.
They also had an exquisite dry rieslign as well. Absolutely fabulous!

Found this on the clearance rack for $8. I just drank some with dinner. First glass, with a pasta & tomato sauce: started bland and finished odd. Second glass I drank without accompaniment; worse - actually gagged on the last swallow. In the morning I'll pour the rest down the drain.
Wine is all about the senses. About sensory evaluation, sensuality and consensual enjoyment. And wouldn't it be awful to lose your sense of taste, of smell, of touch, of sight?
It happens. Years ago, a wine-loving colleague went through a devastating course of chemotherapy to treat cancer and was cured. Afterwards he told me he had permanently lost his taste for wine. He sold his not inconsiderable cellar soon afterwards. Another friend had an operation on his nose that left him without a sense of smell. He'll drink a glass of wine with dinner but admits to being indifferent to its finer points.
I was reminded of this aspect of wine and the senses recently while listening to a wine expert banging on about the unimportance of colour in wine. If I heard him correctly, his thesis was that if the wine smelt and tasted good you shouldn't worry too much about its colour.
I couldn't disagree more. I love the colour of wine in the morning, or the evening. The crystal clear, green-hued glisten of a young riesling; the black cherry colour of a young shiraz; the vibrant inky purple of a Coonawarra cabern? [enough already! - Ed.] The visual appeal of wine in the glass is to me an unmissable part of wine drinking.
The banging on wine person finally admitted to being colour blind! They used to call this attitude making a virtue of a necessity.
And talking of sensory evaluation Long due for reassessment is the ancient scoring system used at most Australian wine shows. The one where wines are scored out of 20 - with a possible three points (15%) awarded for appearance, seven (35%) for bouquet and ten (50%) for palate. Anyone who's ever had a cold will tell you that smell is probably the most important sensory sensation where wine is concerned. When people have colds they typically complain, ?I can't taste a thing.' What they really mean is, ?I can't smell a thing.' It's their noses that are blocked up - not their mouths.
I realise that many judges just award an intuitive score out of 20 rather than individually scoring each component and then adding up the total. Nevertheless, I'd re-jig the weighting thus: three points (15%) for appearance, nine (45%) for bouquet, five (25%) for palate and three (15%) for overall finesse and balance. Whether the scoring system is out of 20 or 100, or whatever, the percentage weighting would remain the same.

This has been a long week. What started out as a short trip to visit family and then a run up to Napa for a three day seminar at the CIA, on the Terroir of California, well, that all changed. I would have to find my own terroir. I did, along with any number of moments that harkened back to childhood. I was going back to a place where you can never return. I just didn't know that?s why "they" were sending for me.
That place would be the California of my youth. That California no longer exists. Sitting at a wine bar in Hollywood talking among folks, who a few moments before were strangers, they asked me why wouldn?t I come back? I?d had these conversations many times before in Hollywood, in the days when I worked there. Nights in October when the jasmine filled the air with their blossoms and Southern California truly was a magical, intoxicating place. That place now is now valet-parked in the corner of my mind and it probably will never be retrieved. And even if it is discovered, who am I to lay any claim on it now? It didn?t work for Balboa; it surely won?t work for me.
Look, the California of my parent's youth seems as if it was even more treasured. If I were to reinvent California it would be in those days; quieter, less polluted, less crowded and you could get away with a lot more than now.
But that night in Hollywood, we sipped on dry-farmed, native-yeast, full-of-life wines from France, Italy and Austria. So, in effect, I had found my place once again. It wasn?t the murky, muddy backwaters of Southwestern Louisiana, no, that will come later this month, if all goes well. It wasn?t the star spewed and endless horizon place like Marfa. But for one brief moment, on a bar stool in Hollywood, I had found my sisters and brother and we were enjoying some really great wine.
Odd, here I was in what are my tribal-home grounds, LA. And I was the only native Angelino in the bunch. They came from Connecticut, Ohio, New York, and Illinois. And they were asking me why I wasn?t still living here. ?I got in on the ground floor. I?m done with it now, except for these brief reunions. It?s all yours, folks.?
Sure the blue fin Toro was like nothing else I've ever had. And the back streets of the hills behind UCLA are a magical place. But I?ve been steering this craft back home all my life. I don?t reckon I?ll make it all the way to Italy. Hell, the Italy I once knew is gone too. Not a problem, the river pathway will be just fine. Somewhere down the Guadalupe?.
I do love the desert, though. Maybe it was all those years sitting on that little rock out in the vacant lot out in front of my house flying kites and staring at the mountain. I see my spirit friends, the hawks, the prairie dogs, the snakes, the lizards; they flash to me from the mountains and hills and tell me they are OK. They?re watching over things. Funny thing about the way it is vs. the way we want it to be. On the plane coming home yesterday I was trudging a couple of carry-ons and my hands were full. Nothing I couldn?t handle, but on the way to the seat, an older couple was struggling with getting their last carry-on up in the bin. They asked me if I could help them. Normally I am very accommodating to people and I was in this case as well. But not before I told the couple that they shouldn?t try to carry things on that they weren?t prepared to handle, that?s what checking luggage is for. The lady, perturbed that I had the audacity to challenge her good judgment in her old age, quipped back, ?Just you wait till, you don?t know what it?s like. Someday you?ll be old.?
?Yes, ma?am, and when that day comes, hopefully more mature than the behavior you are exhibiting.?
As I propped their misshapen luggage into the bin, without as much as a thank you, she simply called out, ?You?re an idiot!?
To which the only reply I could muster up was an effortless, ?You?re welcome.?
Sad sign of the times: collectors are resorting to selling their precious wine in order to raise capital. Lisa Baertlein (reuters.com) writes:
LOS ANGELES (Reuters) - Wine cellars have been taking a hit from the global credit crisis and it isn't because the owners of rare bottles are drinking more -- it's because they have been selling to raise cash.
The selling started with mortgage brokers and has moved to Wall Street as owners turn their collections of coveted vintages into liquid assets.
"People need money. Even richer people need money sometimes," Vinfolio.com founder and Chief Executive Stephen Bachmann told Reuters on Monday.
In the last few weeks, private collectors submitted offers to sell $10 million worth of wine to Vinfolio, a San Francisco-based company that buys and sells wine online. Normally the company has about $6 million offered to it.
This central coast California Cab has a black cherry color with some intensity with dark berry and black cherry aromas with ripe plumb.
Palate--spice front with integrated flavors and tasty dark berry fruit with mocha and dark chocolate. I grabbed this because it was a new label at one of my main wine haunts. At the $10 price point it was tasty and pleasant. Raise a glass.
by Martin Field Readers familiar with Yarra Yering wines will be saddened to hear of the passing of winery founder, Dr Bailey Carrodus, after a short illness, on 19 September 2008. A personal reminiscence I knew Bailey fleetingly in the late '70s and early '80s. He was a loveable if sometimes irascible character with an incisive mind. His wines were highly individual and did not always suit the prevailing palates of the day. Despite the critics, Bailey created his own unmistakable style and gained a wide international market. Thomas Jefferson was a polymath, who, among his other pursuits, was a very impressive and knowledgeable wine expert and enthusiast. If he lived today he would also be called a “wine geek”.
Mr Jefferson also happened to be the third President of the United States, principal author of the Declaration of Independence, Founding Father of the United States, Governor of Virginia, first American Minister to France and founder of the University of Virginia in Charlottesville. He promoted the ideals of republicanism in the United States, an ideology that encourages a system of government that emphasizes liberties and rights, and makes the people as a whole sovereign, which underlies the philosophy of democracy.

This wine is characterized by a yellow-green colour, a fresh citrusy aroma with hints of honey and a complex flowery aftertaste. It’s a semi-dry riesling, dryer than the Slovenian rieslings (such as Laski Riesling for example), but sweeter than those found in Serbia. It is a nice wine to accompany a lighter meal.
This is one of the wines available in Belgrade restaurants in 0.2l bottles, so if you’re a driver among non-wine drinkers (meaning you can’t order a whole bottle of some fine wine) it’s a good chance you’ll be in a position to try it. Do so.
Errol at Washington Winemaker in Bellevue, Washington relates the story of three women winemakers being threatened by the U.S. Olympic Committee for daring to use the name 'Olympic Cellars' for their winery, which is located on the Olympic Peninsula of Washington State'. Gee fellas, I think the Olympic Mountain range has been around longer than your trademark. The mountain range name was made official in 1864 and was in common and published use before that.
Every fan of Pinot Noir will undoubtedly know the name of John Haeger.
As author of the highly acclaimed “North American Pinot Noir,” John literally wrote the book on the fascinating history and evolution of Burgundy’s illustrious grape variety here in the United States. John’s academic approach to both the research and the writing created an instant hit and a must-have treatise for most wine lovers. But, more than anything, it was destined to become THE book for domestic Pinot fanatics. Of course, its appearance at booksellers just months before release of the movie “Sideways” didn’t hurt sales either.
