As many will know Fumé Blanc is the name invented by Mondavi to describe their Sauvignon Blanc's that had undergone oak aging. While Sauvignon's typical crisp acidity remains, the grassy flavours and punchy 'greenness' of the aroma are going to be subdued after a period in oak. Forget the vibrancy of those New Zealand Sauvignon's; this is a different fish.

I love mackerel - even more so since discovering its sustainable and on the list of 'can eat' fish - its meaty in a tuna type way and, when simply pan-fried with a little lemon, a great match to this Mondavi Fume Blanc. The fish was served with roasted potatoes and beetroot. The beetroots sweetness slightly deadened the wines complexity however; but not enough to deem the match a poor one. Cabernet Sauvignon is for wimps.
Yep, you read right. Wimps, I tell ya. You want a dash of crème de cassis? Mathilde makes a pretty one for kir royales. Bursts of blackberry? Pass the Polaner All-Fruit. Chocolate and coffee notes? Starbuck?s can whip you up a mean frappucino. But please, don?t put it in my wine.
I admit, I?m being cranky. And I know it?s partially because I have a pile of dishes in my sink crying out for help as I try to type. But it?s also because I?m trying to make a point: while Cabernet Sauvignon can indeed produce beautiful wines, it?s often made into over-ripe fruit bombs smothered in vanilla-toasted oak.
I know what you?re thinking. Clearly, this woman has never tasted Silver Oak. Or Chateau Mouton-Rothschild. Or etc. etc. etc. I admit, Cab Sauvs can be made into some pretty smoking wines, but can you afford those? Nah, neither can I. The gloriously rated Howell Mountain Cabs are about as far from my price range as possible. As are top growth Bordeaux. Where does that leave me?
Cabernet Franc.
Granted, the two grapes are very different. Cab Sauvignon is all about tannins, dark fruit and leathery aromas. Cab Francs, while also firmly tannic, are lighter, earthier, and display much more herbal aromas. But for me, it?s one of the most wonderfully versatile grapes under vine, producing a plethora of styles, most of which are both food-friendly and age-worthy.
Cabernet Franc, as you know, is one of the grapes used in the classic Bordeaux blend. Along with the more famous Cabernet Sauvignon and Merlot, Bordeaux can also include Cabernet Franc, Malbec, and Petit Verdot. Percentages of Cabernet Franc vary from chateau to chateau, but its typically used more on the right bank in St-Emilion and Pomerol to add tannic structure to Merlot?s juicy roundness.
But Bordeaux is certainly not where Cabernet Franc gained notoriety. That exhalted region is none other than the Loire Valley in France. The Loire is an interesting area that?s largely held on to traditional winemaking methods and indigenous grape varieties, including Muscadet, Pineau d?Aunis, and Cot (the local name for Malbec), among others. The AOCs (Appellation d?Origine Controlle) of Chinon, Bourgeuil, and St-Nicolas-de-Bourgeuil produce reds from Cabernet Franc. The wines tend to be leaner and more acidic than Bordeaux , ranging from the chalk-textured Bourgeuil to the richer Chinon to the juicy St-Nicolas-de-Bourgeuil. While lackluster winemaking can certainly produce bland wines, the true artists of the Loire have been known to craft earthy wines, loaded with mulberry, sage, and minerality that can age for 15 years or more.
Cabernet Franc, however, was largely overlooked in the United States until recently. Some experimental winemakers out in California have been producing Cab Francs that are big, bold, and brawny ? which is just fine, but not particularly true to the nature of the grape. Happily for us, Cab Franc seems to prefer the climate of New York State, and in particular, that of Long Island.
It turns out the maritime climate of Long Island is perfect for many of the Bordeaux grapes ? they dig the summer heat moderated by the surrounding water. Long Island is also cool enough in the winter to allow an appropriate dormant phase without great risk of extended freezes. The Finger Lakes have long struggled with red grapes for lack of sufficient sunlight to ripen, but Long Island has the best of all climactic combinations. And judging from a recent tasting, Long Island winemakers are producing Cab Francs in the all of its glory ? from light and juicy to tannic and mineral-laden.
Raphael and Jamesport both produce what are perhaps the most approachable Cab Francs. Lighter and juicier in style, these wines can both be served slightly chilled as delicious, thirst-quenching sippers. This is not to say that they?re not dinner-wines; indeed, serve them at room temperature paired with rosemary-roasted chicken and asparagus and they?ll certainly blossom.
Castello di Borghese has created a more new world Cabernet Franc that?s full on the palate with sweet cherry fruit and smooth tannins ? it?s a softer, rounder version of the grape that will appeal to dyed-in-the-wool Merlot fans. In a somewhat similar style, Vineyard 48 has certainly gone new world by oak-ageing the wines to impart toasty cinnamon nuances. It?s smooth, round, and creamy, loaded with blackberry and black cherry fruit. Pair either with a hearty beef stew for a midwinter treat.
Schneider produces the most classically-styled Cabernet Francs. If I were to taste their ?Le Breton? blind, I think I?d pick it out as a ripe Bourgeuil. The chalky nose offers plum, sweet red peppers, thyme, and rosemary, with a linear palate of blackberry that expands beyond the stoniness to a smooth, round finish of plumy licorice. Schneider?s ?Roanoke Point? is a bit more elegant, with toasty sandlewood aromas interlaced with rosewater and pluots. The blackberry fruit on the palate is enhanced by notes of roses, herbs, prunes, and roasted peppers. These are both Cabernet Francs for Cab Franc lovers. And a pairing? Why, Long Island duckling, of course!
Ok, now, I?m not saying that after trying Cabernet Franc, you?ll completely abandon Cabernet Sauvignon. But let it swish around your mouth for a while. Taste the lovely herbal notes and the layers of stone and fruit and try to convince me that it?s not an underappreciated grape.

A personal reminiscence I knew Bailey fleetingly in the late '70s and early '80s. He was a loveable if sometimes irascible character with an incisive mind. His wines were highly individual and did not always suit the prevailing palates of the day. Despite the critics, Bailey created his own unmistakable style and gained a wide international market. Strange that we were friendly. When we first met, (I was brash) I shared my considered opinion that some of his '70s wines were a tad too acidic. I got the inimitable Carrodus look...
*What an unusual mix in terms of the international producers you represent?why Argentina, New Zealand and Japan?
- Not really if you consider that Argentina and Japan (Ginjo sake), and to some extent New Zealand, share the same common elements?there are great wines and sake being produced by highly talented winemakers and tojis (master brewers), and they are not getting recognized yet. The quality is already in the bottle?so why should these sell less or get less respect than wine from more obvious regions? We always say that we are really a ?national education company? since we usually explain more than we sell. Our job is to get people to taste these wines and premium sake, and the stuff inside the bottles takes care of the rest. At the heart of this idea is also the notion that in the end, it?s the people you work with who make the difference between mediocre and ?wow!?. We have been lucky, fortunate, and smart (maybe a little of each) to meet and represent some of the top talent in these regions:

*As someone who deals so closely with Argentine producers, what types of obstacles, limitations and concerns have any of them expressed to you in terms of being able to export and promote their products abroad?
- Well, I want to stay out of trouble here since I travel to Argentina a lot, but let me just say that the Argentine government has historically been more of a hindrance than a help for wine exports. As an example, and hard to believe, they actually tax EXPORTS! Perhaps the bigger obstacle for Argentine wineries is that the economic and political situation is relatively unstable, and when you are in an industry that measures commitment and success over a decade or longer due to capital investment requirements, it is hard to deal with a system that usually looks out only 2-3 years at a time.
*In your eyes, what sets apart these Argentine producers you represent? What do their wines bring to the table of American wine consumers that large-yield, often conglomerate-backed wines simply cannot?
- I alluded to this a bit above when talking about who we represent and why. I think there are three main things that set our producers apart:
1) Our wineries are owned by and have Argentine winemakers who have lived in this unique climate and region for their entire lives. For us, that means that the wines that they make TASTE like Argentine wines, not like some random wine from somewhere in the world. And as talented as some of the flying/foreign winemakers are who are working in Mendoza, I have yet to taste a wine from them that thrills me the way our producers? wines do at the dinner table. And I taste everything from down there.
2) As good as they already are, they are still always trying to learn how to improve their wines, and in today?s wine world, that?s the only way you stay on top. It shows.
3) Obsessive attention to detail seems like an abused phrase, but in winemaking it is crucial and not as common as you would think. Our winemakers are also our close friends and in Argentina that is taken pretty seriously. They make sure that every step is done with the utmost care because they would never want to look their friends in the eye and say, ?uhh..I?m sorry but this wine is just ok because we weren?t really paying close attention when we made it.? Large wineries may be able to solve #1 above, but #2 and #3 are far harder to come by, and that?s probably as true in the US as it is in Argentina.
*Looking ahead?are there any regions Vine Connections is looking to expand its portfolio toward, and why?
- We made a strategic decision a few years ago that we would remain specialists in Argentine wine and Japanese sake. Some importers have gone in the opposite direction and are happy to sell one of everything from anywhere, but we?re just not built that way as people. We started as leaders in both of these categories and we feel the only way to stay out in front is to specialize. That?s why we spend almost a month per year in Mendoza and visit Japan for at least 2 weeks every year. It?s our own ?attention to detail? mantra, and we try to stick to it so that we can look our customers in they eye and say every time, ?This is really great Argentine wine and Ginjo sake?. Every time.
- Fortunately, we won?t be bored since there still plenty of regions and microclimates still left to discover in Argentina.
*Given the nature of the market here in the United States, what advice would you give to consumers who would like be aware of, as well as actually see, a dramatic increase in availability of premium Argentine wines such as those crafted by your producers?
- American consumers have helped their own cause a lot already by being very open to trying wines like Malbec, Bonarda, and Torrontes. I think they will help themselves even further by continuing to experiment with wines at many different prices, not just the ?great values? under $15. Nick and I firmly believe that well-made Argentine wines offer incredible value and over-deliver at all price points. A $12 wine is worth more like $16, and a $30 wine is worth more like $40 when compared to other wine regions of the world. And, of course, you can support quality-focused companies like Vine Connections by paying attention to the importer name or logo (like our compass) that appear on every bottle. As with other wine regions, a good wine importer can be your best friend when you haven?t tried a particular wine yet and would like some assurance that you are going to enjoy it?especially when spending more than $15 or so.
Recently, at a dinner with friends, one man's date turned to me and complained, "He's so boring. All he ever talks about is wine. All day long he talks about wine." I probably looked hurt, because I was just as engrossed in our discussion of Syrah as he was. Lorraine leaned toward me and whispered, "She's right, you know. We're all hopeless wine geeks. Look at us from an outsider's point of view."
When I first saw this link, I didn?t quite understand what they were talking about. But, never fear my friends, I did the research and am now perfectly prepared to tell you about the Dutty Wine Dance.
There is a Jamaican rapper who wrote a song entitled ?Dutty Wine?. To the best that I can decipher dutty should translate to dirty. The basis of the song is that he is poor and can only afford dutty wine that gets him very?.um?inebriated. Apparently it also gets the women he is with very drunk as well and this is the dance they do for him while drinking it.
The middle class is in an uproar. All their little girls are doing the 'Dutty Wine'. From left, right and centre, even disabled children, everybody is doing the 'Dutty Wine'.
Disabled children? Did they really go there?
Not wishing in any way to detract from the suggestive nature of the dance, I must point out that it is impossible to do it without long tresses. If you can't get your hair to swing round and round your head while you get down on all fours on the ground, you're not doing the 'Dutty Wine'. It requires supreme flexibility. Consequently, there's not a child who hasn't been stopped from doing it by a parent in the last few months
OK, why are CHILDREN in Jamaica doing this dance. I mean, it sure doesn?t sound like the hokey pokey to me.
The ones I feel sorry for are the disabled children. They don't have legs, so it's perfect for them. They can wine their little hearts out. But even when they do it, it's suggestive if not more so. All the adults hurriedly put a stop to it. Poor little children.
LOL! OMG, did I read that right? Why do they keep picking on the disabled kids? Are there just tons of disabled kids sitting around in Jamaica waiting to do a dance?
What?s worse is that I went on You Tube to see what it was all about and when I searched Dutty Wine I got like 50 million results. Here is one of the first ones I found but the most important question is ?How in the hell could a disabled child do this?

This is another dry red wine from the sunny ?emovsko valley near Podgorica, Montenegro. We’ve covered a few wines from the Planta?e winery in the past and this is probably the poorest of their wines, without much character. Enjoyable only with a meal.
The difference in perception of this wine and the Dulka Cabernet we just covered is quite huge - the wine makers from Fru?ka Gora do seem to know how to add some magic to their wines and add a special touch to it (OK, it costs twice as much, but is well worth it!).

Dulka is one of the most famous wine producing families in the town of Sremski Karlovci, near Novi Sad in Vojvodina. They produce wine since 1920 and have won a handful of awards at the Novi Sad agricultural fair throughout the years. Apart from producing wine, this familiy also produces bermet and brandies of highest qualities.
They have just recently started growing Cabernet Sauvignon, and 2005 is their second vintage. However, this wine is quite rich in both aroma and taste, much richer and deeper than other pure Cabernets around. The color is dark ruby red, the nose rich, so reminiscent of forests and the flavours are those of forest fruit and chocolate. It’s a good wine, can be enjoyed on it’s own.

Dover Canyon Winery has just published a five-part series of articles called Inside a Wine Scam. The series has resulted in FBI subpoenas for the operators accepting money transfers at a remote location in Oklahoma. In a surprising twist, the 'front man' for the scam may herself be a victim of 'work from home' fraud.
When you're gazing at endless rows of wine and you have no clue what to buy, here some generalized tips that can help weed out the crap and allow you to make an educated guess:
1) Don't buy any wine that has dust on it. Chances are there is a reason it hasn't moved. It is either a horrible wine or its a terrible value.
2) If you only see a couple bottles of a particular wine left on the shelf, it may be worth trying. This could be an indication that people are buying it up like crazy and you just happened to walk in at the right time.
3) Read the back label for helpful flavor guides. Smart wineries include descriptions and food pairings. Those that don't have any indicators are anyone's guess as to how it will taste.
Hopefully these easy-to-remember tips will help those in need. Be smart. Use common sense. Don't blindly buy another bottle of vino without making at LEAST an educated guess. Cheers!
I've consumed a handful of cheaper wines this weekend, and whilst the 2005 Wyndam Bin 555 Shiraz was quite good, this puts them all to shame.
Charles Sturt University (home to Australia's leading wine school) sounds like a progressive and interesting place to study. This incredibly cheap but delightful chardonnay is compellingly direct and brisk. Pale with a flash of green, this is pert and laden with stonefruit and crisp acidity.
Perhaps I'm just getting too old, but I can't for the life of me really understand what San Francisco Wine Week is all about.
Here we are living in one of the greatest wine and food cities of the world. We're spoiled rotten when it comes to our wine and food. We expect, and regularly receive great local ingredients in our food, an incredible selection of wines from California and around the world, and completely take for granted the fact that we can bring a bottle of our favorite wine to any restaurant we like.
If there was ever a large city in America that might have a week long celebration of wine, San Francisco would certainly be at the top of the list. And here we are beginning just that sort of celebration, except....
It seems completely, and utterly lame.
As far as I can tell, San Francisco Wine Week is simply six nights of open bars in various venues around the city where you can taste as much wine as you want, no doubt to the soundtrack of thumping electronica.
Come on people. That was the best you could come up with?
Granted, this event is supposedly aimed at the young, urban, hip crowd of Millenials that make up the largest wine drinking population that America has ever seen. But I've got to believe that there's a better way to celebrate what the promoters rightly identified as one of the Bay Area's most defining cultures.
And just to make sure I've exercised my complete curmudgeonly rights, let me just say that the web site and all the marketing material I've seen are horribly unhelpful at getting any sense of what these nightly events will be like. For instance, Wednesday night is the "Sommelier Party" hosted by sommelier Mark Bright.
OK. So what does that mean? If you wanted to find out, say, the difference between that night and Tuesday night, which is the "Import Party" you would be shit out of luck, as they say. Nothing on the web site provides any indication of what is actually going on that night, or any other night, for that matter, other than "wine tastings." Hell, it's not even clear whether there will even be food at these things, except for "San Francisco restauratuers" being mentioned somewhere as some of the sponsors.
And if you want to know what's going to be happening at the ultimate end of week party, the Red Gala, you'll find yourself similarly screwed, except, of course for the dress code, which is supremely, unhelpfully described as "red attire encouraged but not required." So would that be red t-shirts or red ball gowns?
It's quite a shame that a city so steeped in wine and so populated with smart, talented hospitality folks couldn't come up with something better for the first Wine Week than this. As far as I can tell, we've got nothing educational, nothing uniquely Californian, and nothing really fun, except, perhaps if you're a young guy who knows a thing or two about wine and wants to go meet chicks that will be impressed with your knowledge. Sounds more like "party with alcoholics" than it does "celebrate wine culture."
Of course, that may just be the target audience for this whole debacle. The saving grace of which may be that the entire week's events cost a mere $75 bucks. Which means, no matter how bad the event ends up being, a motivated barfly will at least be able to drink their money's worth if they go every night. With only 44 wineries participating, you might also be able to get through every single one over the course of the week. In fairness, it must be noted that some of the wineries pouring at the event are quite good.
I'll leave it to the most adventurous of you readers to go check it out and look forward to happily being proved wrong. But I don't expect to be. San Francisco, you can do better than this.
2006 F et D Clair, Santenay Medium cherry-red colour. A very nice width of high-toned fruit on the nose, slowly it takes on a clear red berry complexion. Good depth and a furry texture on the palate. The acidity is nicely balanced and the medium-weight flavours last very well. A six-pack [...]
What with the Summer Games currently placing China and its regional cuisines in the limelight in terms of reflecting nearly a continent?s worth of complex, multi-ethnic influences, we should also consider other similarly impressive culinary miracles that geographically take up an infinitesimally tiny fraction the size of China?say Slovenia. In my understanding at least, Slovenia has always represented a fascinating crossroads within an impossibly modest amount of land. Many diverse and even warring influences have laced Slovene customs, viticulture and cuisine. Somehow though, like a cultural or culinary manifestation of the metaphysical concept in J.L. Borges? The Aleph, individual influences never amass into an incomprehensible amalgamation, but rather, remain clearly discernible.
Whether in its fairly recent history as a sovereign republic, under communism or seemingly serving as the geopolitical puck between Napoleon and the Habsburgs? shuffleboard match, Slovenia?s former overlords and neighbors include decidedly unique food cultures?Croats, Istrian Italians, Hungarians and Austrians, among others. Bearing all of this in mind and turning our thoughts to the central concern here on Enotheque, I would like to recommend this wine from the Gori?ka Brda region. Aside from being one of the wines I?ve been enjoying recently, I chose to post on it because I strongly feel that it?s indicative of the impressive quality-value dynamic that importers and retailers could benefit from should markets seem more receptive to the artisan wines of Slovenia.
Even if one is already familiar with the Colli Orientali of Friuli?sRibolla Gialla, the Slovene version, Rebula, is more than worth trying. As a whole, Slovenia and the Gori?ka Brda produce white wines of impressive caliber, be it from more distinctly regional varieties or others introduced from abroad: Briski Tokaji, Teran, Chardonnay, Sauvignon Blanc, Sivi Pinot, Pinela, or Rebula for that matter. In terms of this one, vintner Matjaz Cetrtic farms Rebula on wide, terraced limestone vineyards, purposefully limiting yields to ensure lush, concentrated and nuanced wines. My notes follow for the 2004 Matjaz Cetrtic Ferdinand Rebula Brda:
Tasting Notes?
Appearance-wise, this wine is medium gold. The nose is clean and of medium intensity, with highly unusual though pleasantly different aromas of caramelized or burnt orange peel, citrus, flowers and minerals. Strange, delightful palate with just enough lemon acidity, hint of underripe green fruit flavors, minerality in the form of pebbles, as well as the aforementioned burnt orange peel flavor that leads into a nice finish. If in search of something wildly, completely different, I wouldn?t doubt to reach for more Slovene wines such as this Cetrtic Rebula.
As a closing note, should the unbelievable degree of complexity in tiny Slovenia?s food and wine heritages impress you and compel you towards further learning, visit the culinary section of what appears to be their official tourism portal on the web.

I am on my way to visit the vineyards of Thailand. I have already learned about some of the many challenges they face, but now I will learn how they are overcoming them.
Growing grapes in the tropics takes a different approach than in the temperate climes. Vines do not get a chance to achieve dormancy, they grow vigorously all year round. This leads to the "Two Seasons, one Crop" approach, which means that there is only one harvest, even though there could conceivably be two. This increases the quality of the grapes, since the vine does not have to produce fruit twice.
Then there is the rain. This is a monsoon climate, and when it rains, it pours, for months. Wet leaves rot and this would not at all be a suitable time for producing fruit beneath a leafy canopy. And so, harvest takes place in the winter. We are not below the Equator, so harvesting in February and March means growing during the dark months. This has a direct effect on the amount of photosynthesis the vines can achieve.
High water tables in at least one of the vineyards we have visited so far, necessitate rather drastic soil management. A moisture barrier has to be placed 15 feet down, and then stones, in this case slate, is used to fill in the hole, greatly increasing the drainage potential of the vineyards. This keeps the water from rising too far, while allowing surface rains and irrigation to trickle down, nourishing the roots.
Heat is also a major concern, not only in the vineyard, but in the winery. I have tried some wine that tastes as if it may have been made in conditions that were inappropriately hot, but herein lies the rub. Was the wine damaged during production, or transportation and storage?
No matter how careful the wine producers are, the transportation and storage conditions, or more properly, the lack of them, spells disaster for much of the wine. Restaurants and stores often have no refrigeration for the wines, and even if they did, the truck the wine was delivered in may well not.
The heat is also problematic for making wines which contain residual sugar. Those I have visited with blame the heat for restarting fermentation in the bottle, or in many cases the "bag in a box" bladder. I personally think that better sterile filtering practices could make such wines possible, but I will learn more as I visit more wineries in the next few days.
Why the emphasis on wines with RS? The food. Spicy chiles are not easy to pair with wine, and while many producers insist their dry reds go well with the foods, I can't help but point out that I prefer slightly sweet whites with spicy food.

First--Ripasso is a specially made wine from Valpolicella created by fermenting young wine with the unpressed but drained skins and lees left over from making Amarone. Ripasso is made by a number of producers, often using their own variations of this basic method.This wine has a heavily pigmented hue like a Syrah with a deep black cherry presence.
Bouquet is brimming with ripe rich berries and light spice.
Palate--rich tannins with steel and minerals, forthright, juicy, fruit and very tasty.
This wine is voluptuous, velevty and plush; a pure wine. A bit pricey around $22 but well worth it! Raise a glass!
Little kids go through a phase where they need to put everything in their mouth. I wonder what it says about me that I'm pretty much stuck there? I really enjoy trying out new wines and sakes, especially those that are well off the beaten path.
So when Beau Timkin, the owner of True Sake in San Francisco handed me this bottle and said "check this out" I couldn't resist. After all, it was the sake equivalent of....well.....(if you'll excuse what may be a somewhat obscure (to you) Japanese animation reference) Howl's Moving Castle.
This sake is:
1. Nigori - an unfiltered sake
2. Junmai Daiginjo -- the highest grade of sake, where the rice kernels have been polished to less than 55% of their original volume.
3. Nama sake -- unpastuerized, designed to be drunk very soon after production, much like Beaujolais
Can you understand my fascination? Even if you've never seen the phantasmagorical animation movie referenced above perhaps you can understand what a strange beast this sake would be.
Many people who enjoy sake even occasionally are familiar with the cloudy nigori sakes, as they are somewhat trendy and likely to be offered in most sushi restaurants that aspire to have anything more than just the standard hot sake on the menu. Nigori sakes are cloudy because minute rice particles (think flour particles) that are normally filtered out of the sake are left in. These bits of starch both make the sake milky white, as well as add a slight sweetness to the liquid because they contain sugars.
Most nigori sakes are considered to be somewhat rustic, harkening back to the beginnings of sake when, in fact, all sake was nigori sake, since no one bothered to (or had the technology to) filter it in the early days of sake brewing. Consequently nigori sakes do not tend to be premium sakes, which is to say that they are most often made from rice that has not been polished to the level required for premium sake.
So to see a Junmai Daiginjo nigori sake is quite unusual, both because it means that the brewer has gone to quite an expense to deliberately produce such a sake, and that the brewer is confident that such a sake merits such treatment, as the rice sediments that are left in nigori sake tend, on the whole, to mask some of the more delicate flavors and aromas that a junmai daiginjo sake has been made to possess.
Nama sake or namazake is the sake world's equivalent of Beaujolais Nouveau, or perhaps more accurately, fresh raw milk, which is unfortunately illegal in the US. Unpastuerized by heat, namazake has a different character that is cherished by die-hard sake fans as more rustic and "authentic" than commercial releases that go through the pasteurization and stabilization process.
And sparkling sake? Well, what can I say. Sparkling sake is just a oddball phenomenon. It has been made here and there by various producers over the last decade, but not with any regularity, nor with any real commercial strategy. It is perhaps best characterized as one big experiment.
