Regarding Shrinkage

prospect 772 wine?There is a lot of juice in a shrinking market,? an Italian wine exec recently said to me in a meeting. I couldn?t agree more. This week, in the day job, we finally closed out our year. Initial reports are showing a rally in December and the Italian wine sales were better than I expected. In fact, in the flyover world that I track, Italy outpaced France and Spain (easily) and might have eclipsed even Australia. I will post a more detailed report when the bandwidth cools down in the building from everyone wanting to pull reports at the same time.

That said, I have had at least four calls this week from suppliers looking for a home. My terse advice in this moment is a two parter: 1) move here and dig in or 2) stay home and wait it out for the next 18 months.

The ark is full and there is absolutely no more room in the market for anymore Italian wine. If you have an importer and a distributor, stick with them, work with them. Stay where you are. If you are homeless, I am sorry for you. The market is over saturated. For now.

If the Shoe Fits

prospect 772 wineHaven?t we all had a shoe or two thrown at us this year? That was my thought this afternoon. I had spent two days preparing a proposal for an Italian-styled restaurant. They needed to replace a whole slew of wines that a distributor had lost. And we got the call. I?m not sure they really needed me. I think they might have been looking for less expertise and a deeper pocket. With a blank check.

So along with two of my colleagues, we headed for a late afternoon appointment. And waited. And waited.

prospect 772 wineThe person with which we had the appointment never showed. Two days I worked on this presentation. For a no show. It happens. You show up and someone throws a shoe at you. Or worse, they just blow you off. After 25+ years, who likes it? But what can you really do about it?

prospect 772 wineLast week, I did a wine dinner for 30 people. I realized very early in the evening that these folks really didn?t come to hear me talk about Italian wines. They were there for a good meal on a cold night. So I spoke for about 7 minutes and then sat down and talked for the rest of the evening to a couple of people who I really liked talking to. I wasn?t supposed to sit next to them. In fact every time I chose a seat, someone came and took my seat. At first I felt offended. Wasn?t I the person who was here to explain the evening to them? But in reality, that wasn?t the case. The shoe didn?t fit. I was just there along with them. Hey, the owner of the restaurant, who lived on the grounds and whom I have known for 25 years, didn?t even come down to say hello. To his customers! The folks who pay his bills. Forget about being a friend of his for a quarter of a century. Boy, things have gotten really off kilter these days.

prospect 772 wineIs it really that important? No. It. Isn?t. So why the expectations? I really have no idea. Maybe it is something about the Italian idea of respect for one's trade and the hope that if you ply it long enough and diligently enough someone will respond with the deserved respect. Well that could be a cold day in Dante?s Hell, if you really think folks peer that far out of their own personal box of consequences.

prospect 772 wineLife or death; now we?re talking consequences and importance. Not whether we can talk a restaurant manager into lowering his wine by-the-glass prices. The free-market forces will take care of that. The consumers are the real experts in that they will reward (or punish) good (or bad) business decisions. Not those journeymen who breathe it, live it, dream it, day and night, year after year. A sobering thought in the abstract. But weighed against life and death decisions, well, let?s just say if the shoe fits?

In the last 5+ years, many of these men and women have been lost to the future. Someone dodges a shoe, others can?t dodge a bullet. Random? Some divine plan here? And what does it have to do with the Italian wine trail? Or rather, what does the Italian wine trail have to do with it?

As it is with each and every one of us. Except perhaps for the most highly enlightened. Like the yogi master on an island somewhere.

Harvest Conclusion

Spelunking anyone? I feel like a spelunker when I where that headlamp. I’m filling the last barrels for the 2008 vintage in this photo. It certainly was a long one for us, and I’m glad it is over. Wine quality overall seems very good. The whites are delicate and fragrant, and the reds show good varietal character so far.

I know most folks think of harvest as grapes being harvested and received, but the real work for us goes far beyond receiving grapes.  It can be a very physically wearing time, and the end of it all is, frankly, welcome.  We can resume our normal lives and actually get the weekends off.  We aren’t off the hook entirely, though, as the wines and barrels need to be monitored.  We check for the progress of malo-lactic fermentation, check on any wines that may have gone to barrel slightly sweet, and monitor any increase in volatile fermentation.  Barrels also need to be topped, additions made, white wines stirred, and all the equipment needs to be cleaned, repaired if needed, and put away.
Here’s a photo from a few weeks ago that I like.This is a picture of a red fermentor after we have drained most of the wine and before we have started shoveling the skins out of the tank and into the presses. The open space underneath is a stainless steel filter which, among other things, helps us to drain the tank.

UnScrew This

The much-promised, overly hyped Riesling Review has now arrived (brought to you by Mylanta)

Jill, Yulia, P-Cat, and myself (Jay) converged at Boozer Headquarters (my place) last Wednesday for the Riesling blind tasting. P-Cat's writing a column for a local newspaper and needed to taste through a bunch so we decided to make it A Thing. We each got a bottle from a different geographic locale, figuring the areas that needed representation were Germany, Alsace, Austria, New York, and Australia (don't blame me for the last one, ok?)

AND, since we live the malt liquor lifestyle, we tasted them blind, each bottle wrapped lovingly in two layers of plastic bags. Ghetto super star, that is what we are.

Here are my rather lame notes:

Wine #1: Apricot, honeysuckle, rose petals on the nose; palate is lime, tangerine - stones, touch of cream, but thin.

Wine #2: SULPHER! Yikes, burned my nose hairs. V pale in glass. Diesel, swampy nose. Palate of bitter green orange, lemon zest, pink grapefruit. Long finish due to acidity.

Wine #3: Light, aromatic greens - fresh, sweet grass, white flowers, honeydew. Melon-apricot palate with stone minerality and balanced acidity. Yum.

Wine #4: Diesel, wet stones. Sweet apricot, honey.

Wine #5: Swamp water. Grape-lemon pucker candy. Sour Patch kids. Yuck. We no like.

Results:

1: Paul Blanck 05 from Alsace (score 1 for me!)

2: Grosset 05 from Australia (upset of the CENTURY, folks!)

3: Domaine Wachau 06 from Austria (amazing value - our favorite, hands down, at only $12.99)

4: Fritz Haag 05 Kabinett from Germany (which we all guessed because of the residual - oops, sorry, forgot it was supposed to be a dry Riesling tasting..)

5: Red Newt Cellars 06 Reserve from NY State (surprising only in that is sucked so badly for the money - tasting like bad NYState wine, so I guessed this one immedately...)

It was interesting too in that every wine except the Red Newt was screw cap. Go figure.

Still not a huge fan of Riesling, especially since I tasted all these the night before some serious food poisoning that had me leaving pieces of myself roadside throughout the state for the next two days and I can't help but link the two incedents.

Screwed indeed.

Is There A Wine Recession Coming?

With the huge popularity gain for wine in the past five years, one could wonder if a recession in the wine industry is looming.

Much depends on factors in the grand scheme of things. The once-booming housing industry created much wealth for a lot of Americans, but a recent downturn in home sales has created a large-scale semi-panic in the mortgage and banking industry. The stock markets have been shaken by the idea that mortgage companies are virtually disappearing overnight. This has put into question the stability of the biggest banks, and what their exposure to these smaller (defunct) companies has been.

The wine industry is based much on excess wealth. Wine is seen by many, not as an essential, but as a luxury item that would be cut out of a budget if tough times arose. A recent look at distribution and retail inventory levels showed a large glut, sometimes in excess of 200 days worth of stock.

The ever-popular Pinot Noir seems to be immune to this kind of chatter, however. Spurned to new heights of acceptance by the movie Sideways, the "heartbreak grape" seems to be an indespensible red... a must for any cellar or pantry. The next couple of years will be crucial to the industry at the retail and restaurant level.

A Lambrusco for Wine Lovers

prospect 772 wineYou cannot have a better match with a plate of salumi than with this wine. Chill it up a little bit, and start your engines. From the Grasparossa grape, I took a bottle over to a chef from Emilia-Romagna the other day. He has known me for years, but has rarely if ever acknowledged my presence in his world. When I handed the bottle to his son to give to him, you?d think I was his long lost cousin. His eyes lit up, he smiled, he liked me. He really, really, liked me. I owe it all to this friendly little Lambrusco.

Served slightly chilled, it is frizzante, and enters with a burst of slightly under-ripe dark cherry notes. Then the fruit kicks in and there, all of a sudden, you have a party on your palate.

Note: this wine is bone-dry.

Get yourself hooked up with a Lambrusco like this. It takes the snob off the table. It?s subtle and bold, delicate and a romp. It?s a serious wine that laughs at itself. Go get yourself some.

In the U.S. it retails for under $20.

Drink for the Cure

October is Breast Cancer Awareness Month and Fat Bastard wines are doing their part to cure this disease by donating 25 cents for every bottle sold in restaurants and retail stores, up to $75,000. This is the sixth year the company has run this program and to date, they have donated more than $250,000 to breast cancer research.

Deep black cherry hue with a bouquet of pure black cherry, cola, mint, and baker's chocolate with sweet banana chip notes--I kid you not. Wow.

Palate--Elegant tannins with a rich velvety texture bursting with berries, berries and more berries all integrated splendidly. This was GREAT with my venison roast and even at $25, it was a real treat and a value! Raise a glass!

All that Glitters

Love is in the air this month.  For those of you looking for a way to dress up your Valentine?s Day, consider the object of your affection ?the one with the sparkling personality? as your inspiration.

Accordingly, pop open the sparkling wines and celebrate.

If Valentine?s Day is not your thing, there are plenty of other reasons to celebrate with bubbly this month, from Presidents? Day to any other day of the week, which ends in ?y.? Why? Because sparkling wines add a touch of festivity to any occasion and they taste too good to wait for a special event. And, even though you may not have a fondness for this Hallmark holiday, you always have your love of wines to keep you warm.

Sparkling wines, of which Champagne is most well-known, capitalize on harnessing the CO2 created during the fermentation process to provide the fizz we all know and love. This capture takes place during a secondary fermentation, which is coupled with allowing the spent yeasts to remain in the bottle throughout the ageing period. The yeasts impart the bready/toasty aromas and flavors that are characteristic of sparkling wines.

There are several ways to make a wine sparkle, the simplest, cheapest and short-lived being the injection method (aka pompe bicyclette), which injects CO2 into the wine. These man-made bubbles tend to be large and coarse on the palate.

Conversely, the traditional method, based upon Methode Champagnoise, provides a longer-lasting, smaller bead, which has more finesse in its mouthfeel. These traits stem from the labor-intensive process which includes an initial blending of still wines (assemblage) that is then bottled and capped, along with a yeast and sugar mixture (tirage), to facilitate a secondary fermentation. The wines are then left to age on the spent yeasts for a period of time as set by the appellation (in Champagne, this is a minimum of 15 months for non-vintage wines, while Cavas are generally aged for 9 months).

The sediment left behind must then be carefully shifted from the base of the bottle to the neck in a process known as riddling. The bottles are gently tilted and turned throughout a period of several weeks, forcing the sediment down into the mouth of the bottle. The necks are then immersed into a cold, briny solution, thereby freezing the sediment. The caps are removed and the frozen sediment is thrust out of the bottle and discarded (disgorgement). The remaining wine is topped off with a blend of wine and sugar/must (liqueur d?expedition), which impacts the resulting dryness or sweetness of the finished sparkling wine. The final step is the insertion of the cork, which is much denser that those used for still wines given that sparkling wines can be under up to 6 atmospheres of pressure (be careful where you point that thing).

A similar process is used in the transfer method whereby the steps above remain the same with the exception that the sediment is removed in bulk and the wine is then filtered and bottled. Such wines will note that they have been fermented in the bottle, whereas the wines in the previous method are labeled as having been fermented in this bottle. An additional method involves the use of a tank in which the entire secondary fermentation, ageing and disgorgement takes place. While this is of course a much less expensive process than the other two, it is frequently used to produce wines that have a distinct freshness to them such as Astis from the Piedmont region in Italy.

The Champagne region in France has done a good job in marketing itself as a luxury product and this joined with increasing demand, limited supply and expensive processes has pushed up the price on these wines. Vintage sparklers (those produced entirely from grapes grown in a particularly great year) and prestige marquees (i.e. Crystal, Dom Perignon) command even higher prices. However, many sparkling wines from other regions in France (such as Burgundy and the Loire Valley) as well as well-made American, Italian (Asti and Prosecco), Germany (Sekt) and Spain (Cava) can offer the consumer a wonderful experience without the hefty price tag.

Review: Ria

There are a pair of excellent reviews for Ria over at Abstract Gourmet (1, 2). I've been far slower in visiting the deservedly popular and commendable Malaysian restaurant, largely because of the house policy of not allowing reservations. With a young family, scheduling and certainty when it comes to feeding times is very important. . . The solution of course is to visit without children (which most of the fashionable clientele do), or as close to the 5:30pm opening time as possible (arriving after 7pm will mean time waiting on the pavement).

The food is satisfyingly good and true. The menu is short, there were no noodle dishes for instance, but each and every dish I tasted was lovingly prepared and complete. Some highlights included the multi-textured egg plant salad (which had at least 15 ingredients that I could identify) and the indulgent caramelised duck (pictured above). The food, being Nonya inspired, is strongly spiced and flavoured, making wine matching challenging. It was a challenge I avoided, the excellent food and curries are much better suited to beer and in the end I opted for pint of Porters. For those interested in wine, it is BYO (bring riesling, rosé or a cheap GSM blend), or there is a short list (9 whites and 9 reds, and all seemingly from the Constellation stable of brands - Amberley, Goundry, Hougton, Tintara, Yarra Burn, Kim Crawford etc) which could do with more diversity and thought.

Pinot Harvest Looking a Little Spotty

Due to the unusually cool summer, and the recent rainfall, Oregon's Willamette Valley wine producers are nervously biting their nails, dreading a harvest with grapes that are not fully ripened. Without the proper heat units, the grapes will not reach full maturity, although they may look fully ripe. The cooler weather will likely mean that harvests in Oregon will be delayed as much as they can be, without pushing the grapes over the edge.

Look for the next two weeks to be crucial to the '07 harvest.

A dusty nose with earth, menthol, eucalyptus and prune. . . Without too much imagination there is also the scent of a well used saddle. Quite firm and granular in the mouth, with a sour juicy edge and creamy, slightly adhesive tannins. Enjoyable but even in middle age, this is still slightly awkward and abrasive.

Remembering an Aussie Icon With Wine (Wine Spectator)

Shortly after 1 died Sept. 19 at 78, I got a message from Gavin Speight, his U.S. importer. He said that he would like to celebrate Carrodus' life by dipping into his own personal cellar to open a few of the iconoclastic winemaker's older 1 bottles. Earlier this week I met Speight, who imports some of Australia's finest and most venerable artisanal wines, at Cavallo Point, the new resort near Sausalito.

Great Cheese Find: Abbaye de Tamie

Yes, monks can make great cheese. Abbaye de Tamie is such an example. It's a washed rind raw cow's milk cheese. It's not so easy to find, but worth the hunt.

Bubble, Bubble - No Toil or Trouble!

A big thanks to Jessica Yadegaran over at the Contra Costa Times for interviewing me for her very cool piece on cheap New Year's bubblies. Check it out at InsideBayArea.com, and in the event this catches you before you're off to buy your NYE bubbles, hopefully you'll find a few suggestions to your liking for fewer than 20 bucks. Highlights include domestic bubbly from New Mexico, Cremant from France (looks and tastes a lot like Champagne but costs less than half as much) and my all-time favorite bubbly, sweet red Brachetto d'Acqui from Piemonte. Most of all, HAPPY NEW YEAR! Here's to making '09 a banner year, no matter the economic clime. As my mother likes to say, "this, too, will pass..." In the mean time, we've got wine. ;)

Hardys announces that the race to the bottom is over; now for the hard work ...

IN A DRAMATIC change of focus the Hardy Wine Company today announced that it was taking a great leap backwards - and changing its name. From the end of this month the Hardy Wine Company will be known as Constellation Wines Australia. This is an attempt to change the perception of the Hardys wine name from that of a corporate giant to, more simply, a regional winery 'known for quality and craftsmanship'

While this change is largely window-dressing, it is important. It marks a significant shift in thinking at Hardys. In recent years its super-premium portfolio has been sadly neglected, to the point where many premium wine drinkers (and wine media) today query whether the Jack Mann, Houghton Gladstones, Hardy's Tintara and Thomas Hardy super-premium labels still exist. The Hardy Wine Company has become known for good quality, cheap, non-region-specific fighting varietals. It has been at the forefront of the much maligned 'race to the bottom'.

And for a long time this strategy has been widely perceived as puzzling and myopic - like defecating in your own nest.

Hardy Wine Company President John Grant said today that ‘This is a pivotal time for our company as we embark on a range of activities to move our company to higher ground. From 31 March ... we aim to showcase to the world regional winemaking at its finest.

‘By drawing on Constellation’s global resources and tapping into our generational traditions, we aim to become Australia’s regional wine champion, recognised for our quality brands and winemaking excellence.’

‘Changing our company name provides greater freedom to shine the spotlight on the real heroes of our business - the outstanding regional wines. In particular, it allows the Hardys brand to return to being a winery, known for quality and
craftsmanship, rather than being known as a corporation.’

‘We will be adding to our diverse regional offering and continuing our exploration of Australia’s premium wine regions’, he said, ‘as well as strengthening our front line staff, with additional personnel, tools, resources and training’.

Amberley, Banrock Station, Barossa Valley Estate, Bay of Fires, Berri Estates, Brookland Valley Estate,
Chateau Reynella, Goundrey, Hardys, Houghton, Leasingham, Moondah Brook, Omni, Redman, Renmano,
Stanley Wines, Starvedog Lane, Stonehaven, Tintara, Yarra Burn.
