Deep black cherry hue with a bouquet of pure black cherry, cola, mint, and baker's chocolate with sweet banana chip notes--I kid you not. Wow.
Palate--Elegant tannins with a rich velvety texture bursting with berries, berries and more berries all integrated splendidly. This was GREAT with my venison roast and even at $25, it was a real treat and a value! Raise a glass!
It’s pretty easy to call a wine sweet: it has a perceptible level of residual sugar in it (five grams of residual sugar is often considered the threshold of perception). Sweet wines generally start at about 45 grams of residual sugar (RS). Some wines, such as Tokay, have require a minimum level 60 grams of RS and rate wines by sweetness with six puttonyos being instant diabetes.
What’s the opposite of sweet? Dry. All the discernible sugar has been converted to alcohol during the fermentation process. Tricky since you might think the opposite of dry is wet and, well, all wine is wet. Dry doesn’t have to do with high tannins, which might make you go “chomp, chomp” and think “OMG, my mouth is drying out! I need water!” It’s just close to zero grams of residual sugar.
And there’s a middle ground of “off-dry,” or slightly sweet. Silly term, I agree (what is it, moist?). Slightly sweeter than that can be called medium dry. If you want to get all wonky geeky, off-dry might be five to fifteen grams of RS and medium dry, from fifteen to forty. Some countries and/or regions are so wonky geeky that they have specific terms and laws for these levels.
Oddly enough, a wine with a lower amount of residual sugar can sometimes taste sweeter than one with a slightly higher amount; it’s often a question of balance with acidity and one category that can be hard to discern in this regard is Champagne, which also as carbon dioxide zooming at your palate as well.
I bring this up because it came up in the comments of this recent posting about “light” as a wine style. And it comes up regularly in my NYU class. If you want to see sweet and dry in action, try tasting these two Leitz wines or a Northern Rhone syrah against a ripe, sweet version of the same grape from somewhere in the New World (but not all are ripe and sweet).
A combination cited as a classic food and wine combination is Munster cheese with Gewürztraminer. But how many people sit down to a meal of just cheese? What I'm after is a main meal dish.
Ruling out Gewurz with Chinese or Thai dishes (a combination I've never found remotely enjoyable) a recipe sent with a bottle of Espiritu de Chile Gewürztraminer sounded at once interesting, autumnal and tasty.
The wine itself is not hugely expensive (around a fiver) but works well as a mid-week slurp and did work deliciously well with the food - a Thai-Spiced Chicken Salad.

A pleasant nose - hints of violets, limes and roses with similar flavours on the palate only more focused and noticeable. Hints of sweetness balance the wine but this is not a full in-yer-face Gewurz some can verge on the soapy, almost violent in intensity and spicy sweetness. This does have a little of the rose and ginger coupled with a suspicion of strawberries but, as expected for a humbly priced wine, is quite gentle and more subtle.
With the food: Despite the generous dollop of Thai Chili Paste the salad is not overly spicy (in the heat-hot spectrum) it still has a decent level of background heat but not enough to dampen the taste buds and, in turn, ruin the wine. Pear and apple flavours appear in the wine leading to the question should the dish have a little sliced pear added for additional autumnal flavours (not terribly Thai I suppose. Mind you is Savoy cabbage?)

Morris Zwick began his winemaking career small, learning the trade as a home winemaker, building his craft slowly through a mix of reading and interaction with other winemakers. With a background in chemical engineering, he improved his craft over twelve years before deciding to open his own winery, Terrapin Station, which is named after Maryland?s state reptile.
Before deciding to open a commercial winery, however, he began as a grape grower, planting his seven acres of vines in 2003. OK, so I’m trying to insure that the Wine Bloggers’ Conference in Sonoma has good, solid Wi-Fi access. I’ve spent a decade and a half in the networking industry and the last 8 years designing wireless products so when I setup a conference for 160+ BLOGGERS, i.e. many many laptops in the same room, I have my concerns because of the physical limitations of Wi-Fi.
So the hotel hooks me up with the contact information for their service provider (the Wi-Fi is outsourced which is typical for a hotel). I send him a message stating exactly my concerns and pointing out that I’ve setup many tradeshow demos as well as conference networks that got hammered by a techie conference. Here is the email that he sends back to me (understand, I am the hotel’s customer and I am selling out their hotel for this weekend and giving them untold exposure through media the whole weekend). Is it me or is this dude kinda of a douche?
Dear Sirs-
There are a total of 19 APs interspersed throughout the hotel, not including extra devices occasionally set up by catering. Depending on the unit, they?ll support from 12-36 users on the wireless (multiple internals). This has been the design at the Flamingo since its initial design and installation, almost as if we knew what we were doing?
Please inform the users that the codes will be bound to the MAC address of the NIC they use at the time of connection and entry of the code. They cannot switch computers and use the same code. The time in contiguous and not broken up to when they are using the connection, ie: 3 hrs ? 9 hrs of 15 minute usage periods.
Also, be aware that the total bandwidth for the Hotel Guests use is 6mb/3mb. Therefore, this should not be a time for these ?HEAVY internet users? to download all the Richard Simmons or Jane Fonda videos as this type of abuse will naturally hinder the enjoyable experience that such a convention should foster, human dialogue and contact.

I feel better about the chances of success.

I am sure you are tired of me cooing over Hunt Country Vineyards. Since the mid-1980s, when I first discovered them at Union Square Park, in New York City, I have been fascinated by them. But my admiration for them comes from my respect for their improved quality over the years, and their incredible growth, both of which are a great example of what one can accomplish in east coast wine.
At the Goold's Apple Fest I had the opportunity to chat with Art, but a few days later my lap top crashed, and my photos and videos were seemingly lost. Now recovered, I have the photos, but not the video. And I can file my report.
I tasted several of their red wines, and was very, very impressed.
Meritage 2006 - A blend of Cab Sav, Cab Frabc, and Merlot. Aged 14 months in French oak, flavors. Very nice!
Merlot 2006 - Beautiful hints of vanilla has strong cherry and pepper. Very, very nice!
Alchemy - A combination of Franc, Cab Sav, and Noiret. Big black cherry flavors. Some hint of spice. Not too much oak. Very nice. A great food wine.

These are wonderful reds. Art and Hunt Country are hoping to lay to rest the myth that the Finger Lakes should stick to Reisling....and these reds definitively prove fine red wines can be made in the Finger Lakes region too!
When I was thirteen I thought I was going to grow up to be a photographer. I spent endless hours in the darkroom and carrying my cameras everywhere I went. Being shy, it was the perfect date for me at a youth dance. I could take pictures of the action and go into the darkroom later that night to print them. Often folks would come into the darkroom (it was at the same place the dance was, usually) and see what I was doing. Photography was a social magnet.
A few years later, in college and during the Vietnam War era, photography opened up the greater world to me. I met different folk than the ones in the small resort town where I had grown up. I even met a famous one from time to time.
A word about fame, something I know a little about. I grew up in a town filled with famous people (Palm Springs, CA) and learned very early not to make a fuss over folks who have been afflicted with it. Leave ?em be, talk to them normal, change the subject away from them. Some of them might even make the grade to friendship. But, I ramble.
I am a walker. Love to walk the streets of a town. Rome, Paris, New York, San Francisco, Palermo, Naples, Chicago, Dallas. I once walked the route on Elm Street in Dallas where JFK was shot (grassy knoll) to the shop on the same street where John Hinckley bought the gun that he shot Ronald Reagan with. On a hot July day I took my trusty Canon VIT rangefinder and a new Canon AE1 and did my own shooting. The Dallas of that day has altered greatly.
New York? Since 1975, I have trudged the streets of that city camera and wine bag in tow. My childhood friend and photography co-conspirator Bruce took a fabulous street shot, worthy of a Weegee. Bruce went on to become a movie mogul and one of the greatest collectors of photography in the world. And still a friend and drinking buddy.
I spent time in the NY scene with Diane Arbus? teacher, Lisette Model. Not much time, but enough to remember one cold afternoon in January in her apartment. I had already been to Arbus boot camp. It started in California and concluded in a bar in Milwaukee, a bar right out of the collective mind of Kubrick, Serling and Lovejoy. I had walked onto the set of a world that someone like Diane Arbus lived daily. And it scared the holy crap out of me.
I had my time with the world of reportage and photojournalism. One photographer from Magnum, to remane unnamed, asked my help in getting him and his art director through Tijuana for a photo shoot. An ad campaign for Pentax. I thought it odd that the photographer almost exclusively used his Leica M3 for the assignment. When I asked him, his answer seemed cynical at the time. Now, I think he was like a sushi chef, just using the best knife he had to cut the Toro.
And the old masters, so many of them I was lucky to encounter, sit awhile and soak up their greatness. They were called the f64 group. My entry was through Imogen Cunningham and Ansel Adams. In the darkroom with Ansel was a breakthrough, I still remember the warmth of that little room, and not in a creepy way. How often is it you can stand in the dark and be dazzled with brilliance?
Imogen, she reminds me a lot of my friend Alice. Petite, but never diminutive, cantankerous, strong willed and boy crazy. But a vision and a determination to walk her trail without fear. Imogen was a wonderful mentor to me in life.
On the fringe of the f64 group was Wynn Bullock. Wynn was the one who taught me about the vision thing. He schooled me in the philosophy of perception. Thanks to Wynn, some of the best photography I have ever taken was without a camera. I remember how supportive he was when I came back from NY, explaining to me that he also had to take NY in measures, not in giant doses. Like him, I needed the horizon.
My dad was a photographer and a film maker. I still have hours of 16mm reels of film he shot, some of it family, some Italy, and also Old California footage. He always thought I should take more sunset pictures.
Being a black and white kind of guy, I could never understand why he wanted to thwart my path. But fathers do that to their son?s even when they aren?t conscious of it. I love to watch sunsets (like sunrises better) but not to shoot.
My college teacher, Philip Welch, introduced me to many of the West Coast school. He was a student of Frank Lloyd Wright and had given me the entrée to that world. He told me about famous people. He said, ?Call them up, knock and their door. If they are truly great they will talk to you, if not, they are only famous. You want to meet greatness, not fame.?
I?ve had a few friends through the years who made it to fame, but not quite to greatness. I have also had more than my share of friends who bypassed fame and went straight to greatness. I have photographed them, opened bottles of wine with them, danced with them, laughed with them, cried with them and walked through pools of Jell-O with them.
All along the way there has often been a camera nearby, my consigliere of consciousness.
When people often ask me how I "got into wine" I have a sense that they are expecting me to relate some story of a revelatory mouthful -- that one wine which struck me like a lightning bolt and sent me down the path to become the wine fanatic that I am today. Strangely, I possess no story like that about wine. I remember merely a pastiche of many special and prosaic moments with wine that have gradually led to me to the depths of my current passion.
I do, however, have a story like that about how I fell in love with sake.
It was the year 2000, and I was a Director of User Experience at Sapient Corporation, and I was asked whether I would be interested in going to Japan to help the company open an office there. Single at the time, with no pets or other obligations, I excitedly said that I would at least go on the initial exploratory trip, and would make my decision based on that experience.
The company planned to make its introduction to the market with the help of a partner firm, a relatively upstart organization that happened to be headed by several of the former top executives of BCG Japan. Our second night in the country, they took us out to what, at the time, was the best sushi I had ever eaten in my life in a private sushi club in Tokyo's Roppongi district. I knew that my job description that evening was going to involve the consumption of a lot of alcohol, but I didn't much care for beer. So when it was offered, I asked politely if I might drink sake instead. The CEO of our partner firm barked at the chef behind the sushi counter, and that's when it happened.
In my memory, the lights dim a little bit around the restaurant so that the sushi chef is bathed in the sole splash of bright light. He places a beautiful small wineglass on the counter, its bowl foggy with the chill of the freezer he has just taken it from. Then he turns slowly and reaches down below the counter to emerge with a huge brown bottle in his arms, its striking handmade paper label brushed with a stroke that resembles a huge number "2." My glass is poured and placed in front of me, shimmering and cool. And my first sip is like drinking a pristine glacial lake under a full moon.
I had the presence of mind to keep my initial outburst to something along the lines of "Wow, this is really good." But what I really meant was "Holy fucking shit, THIS IS SAKE?!?"
In that moment, I knew that I wanted to drink fine chilled sake for the rest of my life. I wanted to try as much as possible, as many different kinds as possible, and as often as I possibly could.
And that was my introduction to the sake known as Kubota Manju.
To put this in terms that might make more sense to wine lovers, here's an analogy: until that point I had been drinking sparkling wine from a box (heated up in the microwave, I might add) and then someone poured me my first glass of properly chilled Krug Champagne.
Kubota Manju is produced by a brewery known as Asahi Shuzo in the Niigata prefecture of western Japan, and it may well be the most well known fine sake in the world. Asahi Shuzo was founded in 1830 and is the largest producer in Niigata prefecture, and therefore one of the largest producers in all of Japan. Just as the massive Champagne houses who manage to strike a fine balance between making huge quantities of product at a very high quality, elevated further by a globally recognized brand, so too has Asahi Shuzo managed to turn Kubota into the Cristal of sake. The brand of the drink has eclipsed the people who have made it.
Kubota is a trade name -- one of the very first successful "brands" of fine sake on the market. The sake was originally named Asahiyama, and was finally branded Kubota in 1985, taking the nickname that the brewery had enjoyed. The Kubota line of sakes, and Kubota Manju in particular, gained massive popularity in the 1980s as Japan rekindled (some would say created) its appreciation for fine sake, partially due to simply good timing and savvy marketing, but also no doubt because of its extremely high quality and taste.
Asahi Shuzo was one of the pioneers of the fine sake movement (which has only really been around for about 50 years, and successful for 30), and in particular was one of the first to use stainless steel tanks for making sake. The use of steel in sake making has a similar effect to the use of steel in winemaking. It is more hygienic, leading to lower numbers of outside or unwanted bacteria during the fermentation process, and tends to accentuate the fruit. Or in the case of sake, the floral qualities of the rice.
Kubota Manju is an unusual sake in several respects, independent of its popularity or quality. It carries no formal designation of its level of quality, which is why I've had to note the fact that it is actually a junmai daiginjo sake parenthetically above. For those of you who aren't familiar with sake designations, this means that it is made from rice that has been polished down to at least 50% of its former mass, and includes no added alcohol in the brewing process. Not content to stop just past the 50% mark, Kubota Manju is usually made from rice polished down to about 33% of its former mass.
Instead of such quality designations, the Kubota line of sakes are simply given numbers, if you will to correspond to their quality. The "ju" in the name roughly translates to "celebrations" or "congratulations" (though some snidely suggest it might mean "ostentatious") and the other character is a number. Kubota Manju means roughly "10,000 celebrations." The two lower grades of Kubota are known as Senju (1000) and Hyakuju (100), respectively. There are also two or three other, even higher, grades of sake made with the Kubota name every year, as well.
There is a reason that this is the most popular and most well known fine sake in all of Japan. It is the same reason that I couldn't have asked for a better introduction into the world of fine, chilled sake. It is delicate, refined, and incredibly high class, in addition to being a textbook example of top class sake from an organoleptic standpoint, and definitely one of the world's top sakes.
While in the past nine years I have discovered sakes that I like better than Kubota Manju, it will always remain one of my favorites, both for nostalgic reasons, and because it really is damn good. I buy a bottle or two to bring back with me from Japan every time I visit, which isn't nearly often enough.
Tasting Notes: Colorless in the glass, this sake has a nose of cedar trees and fresh rainwater, with hints of dried orange peel aromas. In the mouth it is smooth and silky, with a beautiful weight on the tongue and a perfect dry balance that allows flavors of tuberose and orange blossom to mingle with hints of cedar and wet stone that leave the palate feeling alive and refreshed. Outstanding.
Food Pairing: I love drinking this sake with sushi and sashimi of all kinds, but in particular with the creamy goodness of raw scallops.

Part of becoming a connoisseur of cheap wines is knowing where to look for them. I’ll share with you one of my little secret places I attempt to seek out cheap wine: the “Reduced for Quick Sale” shelf at your local supermarket. At Meijer, my local super-mega-ultra-store, this shelf is usually located in the bottle return area. Not a very pleasant place to be searching for wines, but just think of it as a treasure hunt! You may find a bounty of cheap wines that you never knew existed.
While picking over the wines yesterday, a cartoon label caught my eye: Big Daddy Vineyards Merlot. I picked up the March 2002 vintage for about 6 dollars.
Why was this reduced for quick sale? Was it worth enduring the stench of the bottle return area to bring home this wine? Yes, yes it was. It’s almost sad that this wine traveled all the way from Argentina to end up in my bottle return area.
Big Daddy knows how to make a good cheap wine. Believe it or not, the first attribute of this wine I picked up on was the light hint of bacon. Mmm bacon. Who doesn’t love bacon? Big Daddy loves it, that’s for sure. Look at that belly! On top of the bacon was a strong berry with a leathery taste.
If you’re looking for a full bodied cheap red wine with a lot of character, give the Big Daddy Merlot a try.
